Scottish Shortbread III

This is the best shortbread recipe that I've ever tried! I followed suggestions and reduced the flour to 4 1/2 cups and kneaded alot. We flavored with different extracts then rolled ours out and cut into 1 1/2" cookies. We reduced the end baking time by about 10 minutes. They were great!

Gingerbread Cookies I

SUMMARY: Sticky dough that baked up nicely with great texture. Bland. Substitutions & Changes below: I doubled the spices, used brown sugar instead of white and dark Karo syrup instead of molasses. I also added an extra cup of flour, then refrigerated until stiff. In my 77 degree house the dough quickly became melted and sticky. Freezing it first helped somewhat. My m-i-l thought the dough was spicy, I found the cookie to be very bland even with double spices. (I think I missed the cloves and molasses.)

Delicious Feta-Crusted Salmon

We thought that this was good, but WAY too salty. I used a 1 1/2 lb fillet, 1/2c. panko instead of 1/3c. then baked for 20 minutes. The fish was was well done, the bread crumbs not crunch- which was a disappointment, but this has a lot of potential. Next time I'll leave out the salt and cook at a higher temp for less time. Very worth trying.

Sweet Potato Pie I

Grandma Cornish's Whole Wheat Potato Bread

This is GREAT. I've been making this for years. Add Vital Wheat Gluten (can be found in grocery stores) per pkg. directions to get a easier to work with dough and more tender bread. It makes a LOT and I have to put it into my mixer in batches. It takes most of a day for me to make this recipe, it's great for gifts, freezes well after it's baked and my family loves it!

These are pretty good. I tried it the first time with butter and it DIDN'T work out well. Shortening is really the way to go. We ate them up without any creme filling! Thank you!

Caramelized Baked Chicken

I tried this with chicken breasts and the flavor was great. Next time I will reduce the sauce to 1/4 or so of the original amt. before putting it on the chicken. I only reduced it by 1/2 or so in the sauce pan and it didn't quite candy and I over cooked the chicken. The flavor was SUPER. Thank you!

Banana Oat Muffins

I made these with whole wheat flour, added a ripe banana and a tsp. of cinnamon, then topped with a sprinkling of brown sugar and oats.(After following the directions exactly the first time. ) They're pretty good and substantial, but not very sweet. The kids love them but it's not a WOW recipe for showing off. This is now a breakfast staple at our house! Thank you!

Buttermilk Pancakes II

This is a great staple recipe at our house and we double the recipe when we make it. We replace the white flour with 100% whole wheat and the butter in the recipe for corn oil. (I still put butter on top and didn't want to over do it!) Great with chocolate chips and berries in the batter too!

Amish Breakfast Casserole

I tried this with sausage, and then with bacon. The bacon was the winner. I used frozen hashbrowns with peppers and my husband said that the sweetness of the peppers took away from the cheese blend. This is a winner.

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

My cookies turned out a little bit greasy, perhaps because I hand mixed instead of using an electric mixer and used semi sweet chocolate chips. They were INCREDIBLE after I rolled the dough balls in sweetened coconut and baked as directed. Chewy, crisp, sweet. Will make again and again.

Different Chicken Cordon Bleu

This is a great recipie, nice looking for a company meal. I didn't have wine to add and it was still great. However, it was WAY WAY too salty. I won't add any salt next time.I thought the amt. of stuffing for the top was just right.
