Mary's Pecan Crusted Chicken

This recipe was very good, although I agree that the chicken must be pounded very thin so it cooks quickly. I used butter instead of olive oil. I had a little bit of a hard time with the pecan mixture staying on the chicken. Other than that, it was pretty good. Maybe a little too much cinnamon, but definitely something I will make again.

Pecan Sweet Potato Casserole

This recipe was very easy and made a delicious side dish. The color was kind of strange (I used sweet potatoes that were very light yellow). Yams may have made it look better. Overall though it was very good. Everyone had seconds.

Apple Walnut Salad with Cranberry Vinaigrette

Salisbury Steak

This was a very good recipe. I used just under a pound of ground beef and kept the rest of the recipe the same. I made seven smaller sized patties, and since other reviewers mentioned the patties falling apart I made sure I was very careful flipping them. I had to use a turkey baster to drain off the excess grease since I couldn't really move them too much without them flaking. Anyway, they turned out very good, moist and flavorful. I was worried about the mustard and horseradish overpowering the sauce or giving it a strong taste, but you couldn't really tell it had those in it. It was very good, very easy and I will definately make this again.

Mushroom Stuffed Chicken Rollups

very good recipe. I forgot to brush the chicken with butter before rolling in bread crumbs but it still came out good. Very moist and yummy!!!

Beef, Burgundy Style

This was so good. Instead of the demi glace, the herb bouquet and the onions I just used a package of onion soup mix. It made it a lot easier (maybe not as good) but my family ate every bite. I served it with mashed potatoes with the sauce on top. The meat was very tender and the sauce is so delicious!!!!

Zucchini Cornbread Casserole

Very good side dish and great way to use up all those summer zucchini. My family really liked this recipe. I did not use as much cheese as called for but probably should have. I will try it again with the stated amount of cheese. Definately a recipe worth hanging on to.

Cashew Rice Pilaf

This recipe was not only delicious but very easy to make. I used Minute Rice and doubled up on the amount since I didn't have any wild rice and just let it cook for 5 minutes and it still turned out great. Even my daughter who is a picky eater ate a huge serving. I also chopped up the raisins and crushed the cashews to make it easier for my kids to try. I will definately make this one again. Thanks.
