Chocolate Peanut Butter Bars II

AMAZING. Tastes just like a peanut butter cup. Closest thing to a cafeteria "hollywood square" that I have come accross. The only downside was how difficult they were to cut. It ended up being in sort of jagged pieces that I put into cupcake cups, the chocolate wanted to just split apart (I scored it like other reviewers said, and that didn't help)and it had a mind of it's own with the shape of the pieces. Didn't hurt the flavor though!!! This also has thicker chocolate I thought than your traditional hollywood square. I did also use the parchment paper to line the pan and that worked well.

Bodacious Broccoli Salad

I thought this was pretty good, worthy of 4 stars, but definitely not 5. There is just so much overpowering flavor from the dressing, onions, sharp cheese, bacon etc. that it's hard to taste the broccoli. The dressing overall just tastes like your standard strong creamy italian, I kind of thought, might as well just buy a bottle and dump it on. I think the champagne vinegar is a must to make it a little different. There is also too much cheese in this recipe (I'm NEVER one to usually say too much cheese), but I'd reduce it by half and add raisins and sunflower seeds. The raisins added a bit of sweetness that's necessary. I will make this again but do half the cheese with raisins and sunflower seeds. I also may try this with sweet and sour dressing. REAL bacon is absolutely necessary as well, but I think bacon bits are nasty.

Barbeque Beef Casserole

My husband and I liked this dish. I cut the recipe in half and used only 1 box of cornbread mix and it still made a lot. 4-5 large servings. This recipe is also very good with Manwich sloppy joe sauce nstead of barbecue sauce, and the Manwich sauce makes the recipe less dry. I used about 2/3 can of Manwich for half of the listed recipe. I will continue to make this dish, it's pretty easy and doesn't take long to bake either. It's also cheap.

Country Apple Dumplings

This recipe is wonderful. I made it exactly as written except cut in half, in a square baking dish. It's important to not put this in a baking dish that's too large, it needs to cook in the sauce. And vanilla ice cream on top is a must!!! My husband said it was very "gourmet". :)

Maple Salmon

Amazing. Wonderful. Best salmon recipe ever. I'm not a huge salmon fan, but I LOVED this. I made this exactly as the recipe suggests except without the garlic salt. The soy sauce was enough salt. The sauce thickened up nicely as a glaze to pour over the salmon. I used this amount for 2 fillets, I would make a bit extra if I were making more portions. I can't wait to make this again!!!

Best Tuna Casserole

this is a 3 star recipe before alterations, and a 5 star after some changes! I added 1 8oz. containter of light sour cream, and 1/2 cup milk to the recipe, and it was a perfect consistency. Not too dry or wet. The sour cream gives it a nice flavor so it's not as bland. I also mixed the majority of cheese in with the casserole, it would not be enough with just 1 cup. And then I added a little extra cheese on top. i also cooked the onions beforehand in a pan so they were soft. You might need to add a little salt and pepper to this as well. I used Ritz crackers on top only because I didn't have potato chips, but I'm sure the chips would be excellent. After these alterations the recipe was wonderful! Next time I will try 1 cup cheddar and 1 cup shredded velveeta cheese, I think that may add a nice flavor as well.

Salsa Chicken Rice Casserole

I thought this recipe was really really good! I followed the original recipe ALMOST exactly, but I think there are a few things that were necessary. I used 2 cups monteray jack cheese, and 2 cups shredded Velveeta cheese. This made the cheese flavor a little stronger, as my family loves the traditional salsa/velveeta queso dip. I also cooked the chicken in a pan and added the onions to saute, and then shredded the chicken instead of cutting it into cubes. I think you should at least have 1.5 lbs of chicken with this, because there's too much sauce witthout it. Or a little more rice to thinken it up a bit. But it really was great!! It made a lot and we are looking forward to the leftovers!

Holiday Brie en Croute

This recipe was WONDERFUL as is. I chose the raspberry jam, craisins, and toasted almonds. It's incredibly easy to make, and was a HUGE HIT! One of the best recipes I've made from this site. I made two, using a 14 oz Brie for one, and an 8oz Brie for the other. I didn't trim the pastry much, just folded it underneath so there was TONS of soft pastry to eat with the cheese.

Tacos in Pasta Shells

I have made this dish many times now, and my family loves it. I've added a pinch of cilantro before, and also made it with packaged taco seasoning in the meat. I always have some guacamole as well on the side to top it with. It's always good!

Baby Blue Punch

The first time I made this recipe for my baby shower, and it was A HIT! We made one punch bowl exactly as described, and then another ALCOHOLIC, with a half bottle of "Three Olives Whipped Cream Vodka". It was fantastic, just the right amount of "dessert-ness" with the ice cream and whipped cream vodka, but also went very well with the citrus from the juices. I have made this a few times since and it's always GONE.

Easy Candy Yams

This was a great recipe, but does not need any butter AT ALL. I cut the butter in half and was still scooping it off the top. I used canned potatoes, chopped them up a bit and then topped it with caramel sauce, butter brown sugar and marshmallows. After the butter sludge was gone, it was FABULOUS! Very easy recipe. Next time I will probably mix the caramel and potatoes more, and add some pecans on top!

Annie's Fruit Salsa and Cinnamon Chips

Everyone at my family get togethers LOVES this dish now! Although I think there is one thing that is essential (at least from my experience) that is an absolute dealbreaker here, and that is the texture of the fruit. The first time I made this dish, I sliced up the fruit into small chunks with a knife. Everyone liked it, but it wasn't a huge hit. The second time, I used a blade chopper and chopped the pieces up much finer like actual salsa (in my picture). This time everyone LOVED the dish, and it was completely gone. It seems like the smaller the chunks the better, but without it being soupy. I also used fuji apples, boysenberry preserves, and added a small amount of blueberries!

Bacon Ranch Pasta Salad

I was actually surprised how much I did not care for this. I followed the recipe exactly other than using cheese tortellini instead of rotini pasta. I did not like the sauce. It tasted exactly the same as if I would have just poured a bottle of ranch dressing on top, which was just strange to me. It tasted more like salad that was missing lettuce. I will definitely make this again using a DIFFERENT kind of sauce base, either a vinegar/balsamic sauce or more of a regular pasta salad/mayo type that is thicker and doesn't have such a strong ranch flavor. And I like ranch dressing.

Peachy Fruit Salad

This dish can be made with many different kinds of fruit depending on the season. I had a very hard time finding good peaches, and one time I made this it was a DISASTER of nasty, hard peaches. So since then I have been making it with pineapple, grapes, apple, and banana. Then mixing with apple pie filling and putting candied peacans on top (that is the part everyone LOVES.) This variation is my favorite and the one I will continue to use because the peaches incident scared me. Also, do NOT use canned peaches, I also tried this as a solution and it was downright terrible.

Cheesy Corn Casserole

This was the best corn casserole recipe I could find that incorporated cheese, and it was A HIT! I'm sure the recipe would be just fine exactly as is, but I just added an extra egg, doubled the cheese, added about 1/4 cup sugar, and a bit of green onion. I feel the extra cheese was pretty necessary. The sugar make it taste a little bit more like corn cake, which everyone loved. And the green onion just gave it a bit more flavor. Overall EXCELLENT.

Fruit Salad in Seconds

As the recipe states, it's just OK. The second time I made it, I added blueberries, to the mix. I then topped it with raspberries and candied pecans. PERFECTION after the quick fixes, and lots of compliments on the dish!

Chuck's Favorite Mac and Cheese

This recipe is just like my grandma used to make. I followed the recipe almost exactly, except I put the cottage cheese in a food processor to grind out the chunks. I then blended into the cottage cheese 1/2 cup milk and other reviewers suggested to prevent dryness. I also made sure to use REAL shaved parmesean cheese from the deli instead of the crumbled kraft kind. I think this made a huge difference, and the dish had a bit more flavor. If you don't like the "fake" tasting TV dinner mac and cheese, this is for you. Extremely creamy, flavorful and smooth.

Mouse's Macaroni and Cheese

This is amazing Mac and cheese, I followed the recipe exactly and wouldn't change a thing! Dont add any extra noodles! It is perfect exactly how the recipe states, and I suspect the dish would be quite dry with extra noodles. I would suggest however putting it in a roomy dish, mine kind of overflowed and created lots of burnt cheese at the bottom of my oven. Also let it stand about 20 minutes covered after baking so the sauce thickens properly, it will still be extremely hot! Great recipe!!
