Refried Beans Without the Refry

This is a wonderful, super-easy recipe that I prepared and loved exactly according to the recipe. It's a good way to try using dried beans for people who've never used them before.

Jam Thumbprints

These were delicious! I made them for a wedding shower and got lots of compliments. Like other commenters, I added the jam before baking, and the tip to put the jam in a plastic sandwich bag and cut off the corner for filling the cookies was a HUGE help--probably cut the prep time in half. I also added about two tsp. of fresh rosemary to the batter, using apricot jam for half of the cookies and raspberry for the other half. I will definitely make these again.

Nice crunchy cookie, great for the holidays. I did double the spices (except the pepper) and was still wishing for more spiced flavor, so I'd probably triple them next time. I also cut the sugar down to 1 c. and it was still just the right amount of sweetness.

West African Peanut Soup

This was a fantastic soup! I cut the recipe in half, which made it just enough for two with lunch leftovers. I also used leftover rice from another dinner (2 c. cooked, which made it a bit heartier). The flavors are excellent. I know it seems like a lot of peanut butter, but you could still taste the tomatoes. And using a fresh chili pepper instead of the ground red pepper gave it just the right amount of kick. Thanks for posting this! I'm looking forward to making it for guests next time.

Oven Pancake with Apples

very tasty! I cut the recipe in half, since there were only two of us, and also made the following adjustments: -used scant 1/2 c. whole wheat flour topped off with cracked wheat for a healthier pancake. -added cinnamon. -used peaches (without pre-browning, just right in the batter) since they're in season. I'd like to try some berries also.
