Awesome Slow Cooker Pot Roast

My slow cooker is not big enough for a roast and veggies so I baked this in the oven. Cooked in a small covered roaster at 350 for 2 hours, added potatoes and carrots, then after 1 more hour decreased temp to 275 for 3 more hours. Roast was done after 2 hours but tough (I used bottom roast that was on sale). After the 3 additional hours it was still moist and tender enough to cut with a fork. Substituted beef bouillon for water as recommended & gravy was wonderful! This is a new household favorite.

Vanilla Glaze

Made a few changes per other reviewers & used on a triple chocolate bundt cake. Didn't want a glaze that was too white or brown. These changes were flavorful & worked for me: Reduced confec sugar to 1-1/4 cup; increased vanilla to 1 tsp & butter to 1 Tbl; added 1 Tbl light corn syrup. Added milk last then added by 1/2 Tbl at a time until the consistency was good for drizzling.

Turkey Brine

The turkey was very moist. I couldn't really taste the spices in the meat but it made the best gravy ever! Veggie broth was too expensive so made my own like other reviewers suggested: tomatoes, celery, onions, carrots & parsley. It was in the 30s outside so I put brine (including veggies from the broth) & the 20lb turkey in a cooler on the balcony for about 24 hrs. Turkey still took 8 hrs to cook. Will definitely use this for all poultry in the future. Thanks for sharing!

Cranberry Apple Muffins

Made these the morning after T-Giving. It was a good way to use up T-Giving groceries & wasn't overly sweet. My changes: Didn't have coriander so used 1-1/2 tsp allspice. Added 1/2 Tblsp lemon zest. Left out nuts for my picky husband. Both moms asked for the recipe.

Tasty Green Beans

If you want a healthy side dish this recipe is not for you. But if you have a family that will only eat beans or corn & you're looking for ways to dress them up because you just can't take beans and corn any more, then this recipe is for you! Seriously, it's very good. I use one beef bouillon cube dissolved in about 1/2 cup of water.

E-Z Marinated Swordfish

We have made this over & over for nearly a year now. My husband is a picky eater but loves this one. I used Sriracha Hot Chili Sauce in place of the hot sauce (Asian food aisle). It adds spice without the vinegar flavor of a lot of hot sauces.

Cowboy Cookie Mix in a Jar

I thought I was packing hard, but like others, I couldn't quite fit everything. Leaving out the nuts it just barely fit. I scooped by teaspoonfuls instead of forming balls, and the first batch was a tad too crispy around the edges. I made the cookies a bit bigger in later batches and they stayed chewier. Will definitely made again, really great cookies, and will probably try the gift jar again. It was a pretty & inexpensive gift with a personal touch.

Blackened Tuna Steaks with Mango Salsa

A great blackened tuna, better than some I've had in restaurants. Like another reviewer, I mixed toasted sesame seeds into the spice mixture for more of a crusted effect. I made it without the salsa so can't comment on that.

Macadamia Crusted Mahi-Mahi with Fresh Mango Ginger Chutney

My husband's "favorite recipe ever" and he doesn't care for fish, onions, or nuts. I was a little concerned about the odd combination, but we couldn't taste the onions or the coconut in the chutney. It really made the meal. I only cooked the fish for about 8 minutes total and it was completely done.

Eggplant Parmesan II

REALLY GOOD! I was planning on making this plus a non-veggie meal but when he got a whiff of this he decided he would go veggie for the night. We both loved it! I was in a hurry so I didn't sweat the eggplant as others described. It turned out fine. Baked the eggplant for 10 min each side. Only used 1 eggplant in a 9x9 dish. Was enough for 4 layers. Served on angel hair it was enough for the two of us plus some leftovers.

Chris's Incredible Italian Turkey Meatloaf

Super Good. Used Italian Bread Crumbs instead of Oatmeal & Lipton Onion Soup Mix instead of Onion since some family members are not fans of chunks of onions. This was a big hit.

Jay's Jerk Chicken

Great!! Didn't have allspice on hand so added 1/3 tsp cayenne, 2 cloves minced garlic, and 1/2 tsp cinnamon. Paired it with a spicy veggie so chicken was just right, not too hot or mild. A keeper!
