Chicken Breasts in a Date, Caper, and Mascarpone Sauce with Couscous
I did a veggie version of this recipe by leaving out the chicken and it was awesome. I recommend using an ample pile of cucumber and tomato on the top of the dish (or sprinkled around it) to cut the delicious, but otherwise overwhelming sauce. An easy recipe to produce as long as you've got the ingredients around. Will definitely make again.

Let me start out by saying that I'm always a tough judge when it comes to fudge. We made this fudge for Christmas (with 2 cups milk chocolate, 1 cup semisweet) and we got rave reviews from all of our family members. Like another reviewer said, I still think it was a little too "dark", and more importantly to me, it was too hard. I prefer a softer fudge, so next time I might consider adding some whipping cream or more butter or something. That said, the hardest part of the recipe was cutting it after it was refrigerated. Oh yeah, I don't know how big a piece of fudge these people are eating, but it can easily make 24 pieces of fudge. Maybe 32...if you want to cut that much.

Easy-for-Kids Chocolate Muffins
This recipe is easy to make and is probably best suited for people who don't like very sweet food. I made this in Japan with some Japanese students, and they enjoyed it, since usually many dessert recipes are too sweet for them.
