Rhubarb Cobbler

I'm eating this right now at work (the day after I made it), with a cup of coffee. Incredible combo - and tastes just as good the next day. A great way to use up a garden full of rhubarb!

Made this to go along with the "Cajun Chicken and Sausage Gumbo" recipe I found here (which is awesome!), and it complimented it perfectly. Folled the tips to soak the cornmeal - turned out great!

Blackened Seasoning Mix

This stuff is fantastic! I love that there is no salt, so you can load on lots without over-salting your food. Have used it on fish, shrimp and chicken. Everyone loves it. - thanks for the recipe!

Black-Eyed Pea Salsa

Very hearty and great flavor. Best to by the chips shaped like 'scoops' for this salsa. I made it for a get-together, and it recieved lots of compliments. ...one reviewer said it was far too salty, but mine turned out prefect. Maybe make sure you are using garlic powder, and not garlic salt.

Baked Ham with Honey-Apricot Glaze

Very good. I made this in an electric roaster, while our Thanksgiving turkey cooked in the oven. It turned out great, but there should be "Orange" somewhere in the title, as I found the orange juice concentrate a promonent flavour. I'd recomend it, and make it again. Thanks!

Roasted Red Potato Salad

This was a hit when I took it to our friend's cottage. I roasted the onions along with the potatos for half the cooking time. I also cut the Mayo in half, and added ¼ cup sour cream and ¼ cup softened cream cheese, along with some grilled vegetable seasoning. Everyone thought the "roasting" idea was awesome.

Cajun Chicken and Sausage Gumbo

This gumbo is incredible! I added some okra, black beans, and gumbo filé seasoning (ground sasafras). The roux is key. Takes about 20-25 min of stiring to get a good color, but well worth it! Bravo to the author of this one, thanks!

Easy Chicken Rice Casserole

Not bad, but I found it a little bland. I added some garlic powder, some onion flakes, and oregano, and added a topping of crushed saltines, cornflake crumbs parmagean cheese and butter, but I think it still needed a little more flavor.

Fresh Southern Peach Cobbler

Tried this with fresh Ontario peaches this past August when they were in season, and it was fantastic! Did it again about 2 weeks later with about 5 nectarines, 2 apples and some raisins, and that was just as good too. It's just as good (if not better) after being covered for a day and the topping gets nice and soft. Thanks for this one, it will be used often.
