Beef 'n' Eggplant Pie

This came out fantastic! Only things different: I used 3 turkey brats that I broke the casings off of and cooked and rinsed. Husband loved it because it satisfied his pizza craving without the grease.

Southwestern Quinoa Salad

Only 4 stars because I used this as a jumping off point. I had a box of Near East Quinoa blend roasted red pepper & basil that I wanted to use up and this inspired me. Didn't use as much oil in the dressing or the broth/butter in prep of quinoa and used mozzarella cheese in place of the feta. Also made own adobo seasoning. Ate as a side dish scooped with tortilla chips. I loved it and so did my husband. Thanks!

Kalua Pig in a Slow Cooker

Absolutely amazing! I used a 6lb shoulder blade and ended up using a couple tablespoons of the liquid smoke (I used hickory)and an extra tablespoon of sea salt - I also cooked it on high for 5 hours. I put the juices in the freezer so I could skim the fat and then shredded the meat and put everything back into the crockpot to hang out for another 30 minutes. I served it over brown rice and had my homemade teriyaki sauce on the side for anyone who wanted extra sauce. This was heavenly - thanks for the recipe!

Pani Popo (Hawaiian Coconut Bread)

These were amazing! I used Rhodes white rolls and just let them thaw and rise according to the package - I also used 20 rolls in a 9x13 pan. To make them a little more figure friendly I used light coconut milk, the fat free condensed milk and only 1/2 C of sugar. We had a luau this weekend and these were an awesome finish.

Traditional Pita Bread

This is a nice and handy recipe to have on hand. I followed the advice of another reviewer and used half whole wheat flour, and the yeast technique with the kitchenaid mixer. I let these rise for about 45 minutes on their greased baking sheets, but truthfully they could have used a little longer, but I was impatient. It's key to roll your dough very thin - if you are hoping for a traditional pita pocket style bread. Will definitely make again!

Broiled Tilapia Parmesan

This was delicious, I needed a great and easy recipe and this completely hit the mark. I followed the advice of one of the other reviewers and added some breadcrumbs and ground red pepper to the mix. This recipe is a permanent fixture in my collection. Thanks so much!

Blueberry Zucchini Bread

This was amazing! I did make a few changes. We went huckleberry picking last weekend so I substituted those and used 1/2 whole wheat flour & 1/2 white flour. I used less sugar by using 1 1/4C white sugar and 3/4C brown sugar. I used 1/2C of applesauce and 1/2C of vegetable oil. It was very moist and delicious! Everyone gobbled it up!

Glazed Salmon Fillet

This was a pretty good recipe, needs some tweaking though. I substituted red pepper flakes for the cayenne pepper to really jazz it up. I also cut way back on the brown sugar. I just added it in small parts until it tasted right. I probably ended up with about 1/2 Cup for a 3 lbs filet. Also, anytime we are grilling salmon filets we put it on aluminum foil, it makes clean up so much easier!

Pecan Zucchini Bread

I have made this recipe a couple of times now. It is very versatile. Sometimes (when I am trying to be healthy) I replace half the flour with whole wheat flour and use 1 egg and 2 egg whites. I also replace the oil with 1/2 cup of applesauce and 1 tsp of oil. I've used non-fat plain yogurt in place of the sour cream and have used stevia in place of the sugar. Like I said, very versatile recipe! It's a great base that you can add to and make your favorite way! Thanks for sharing!

Huckleberry Pie

I am not sure what went wrong with this pie. We had just picked our huckleberries in the Columbia Gorge and they were very tasty, so I thought they would be perfect for a pie. I followed the advice of another reviewer and increased the flour to 1/4 C and the pie was still very runny. It completely saturated the bottom and even the top crust. It was like eating mush. I've decided to make this again but instead I will make mini pies in cupcake tins to control the oozing and keep some consistency. Also, I will not use the cream on the top either, I don't think it did much except to add more calories.
