Whipped Shortbread Cookies

I love shortbread and was looking for a fluffier version. This worked out great! I wasn't all about the cherries, so when I took them out of the oven I sprinkled some semi-sweet chocolate chips on top and waited for them to melt then spread them like a frosting. They were tons better the next morning! The chocolate made them really moist. The salty butter and chocolate is so good.

Caramel Shortbread Squares

These are really good! They are nice and thick- you need a glass of milk with these. They reminded me of a Twix bar. Yummmm :)

Saltine Toffee Cookies

I would definitely use parchment paper for this recipe. I have made these a couple of times and they cut better when I put them in the fridge for hour before cutting. The last time I made them I used them for my christmas cookie give-a-way at work and recieved so many compliments. I also thought these were so easy to make. Thanks for the posting!

Mocha Cream

This whipped cream was awesome! I am a coffee fanatic so this was perfect! I used it as a cake filling and frosting, then also used it to pipe words and designs on top of the cake. I had left overs and used it for on top of my coffee (I love coffee) and also hot chocolate. This was sooo easy and quick. I will be using this recipe a lot. Thanks so much for the yummy posting!

Rolled Buttercream Fondant

I thought this recipe was really easy to make. Because it was a little greasy I added more powdered sugar and think I souldn't have added so much. I let the dough rest for an hour before rolling and that helped a lot. Because of the extra sugar it did crack a little once I rolled it out, but it tasted great and kept the cake extremely moist. The next time I use this recipe I know not to add as much sugar! ;)
