Greek Orzo and Broccoli

Excellent orzo dish. Just a few mods that I made: Used 2 cubes of bullion to boil orzo, subbed regular olives for greek olives, used cubed mozzarella instead of feta (this made it a lot more stickier/stringy), used marcona almonds, and subbed South African smoked seasoning blend for the red pepper flakes. Super delicious and plenty left over for a grab and go lunch.

Balsamic Baked Tilapia

Easy, healthy, delicious. I chose to put this over a bed of spinach and added quinoa as the side. My wife snapped a photo of it plated because of how gourmet it looked (and tasted).

Quinoa and Black Beans

Made this a hundred times and it is tried and true. I usually skip the corn and opt for chopped spinach and canned chicken instead (added when the corn is called for). I also use chicken broth (low sodium) instead of vegetable broth, and olive oil instead of veg. At this point I just eyeball the seasoning, but I almost always go more than what is called for. I rarely have cilantro on hand, but when I do, it really sets this dish off!

Garlic Alfredo Tilapia

Super delicious and super easy. This recipe is a winner. My only complaint was the Creole Seasoning Blend that this recipe calls for (I also found this recipe on allrecipes.com). It really gave a flavorful zing to the tilapia, but it was WAY too salty. If using this seasoning with this recipe, I'd recommend halving the salt that is called for (a whopping 3 tablespoons!). Other than the salt, this dish was flawless. Thanks!

Turkey Tetrazzini II

Very delicious. As others have said, onions and garlic in olive oil before beginning is a must. I subbed whole wheat pasta for the reg pasta, and halved the butter (also applied on top of the dish - cubed - before the final dusting of cheese). Still awesome. Next time I will try to find a healthy yet comparable alternative to the butter. Oh yeah - the protein is pretty interchangeable in this dish.

Broiled Tilapia Parmesan

Excellent dish. The key is to cook the tilapia just before the coating is about to burn. I followed the step to a T, and then popped it back in the oven at 1 minute intervals about 4 or 5 times, checking the flakiness each time. The dark brown (near burnt) coating coincided with the fish being cooked perfectly.

Fettuccine with Sweet Pepper-Cayenne Sauce

I only cook occasionally and the results are often mixed. However this recipe made me look like a gourmet chef! It is simple, quick, and delicious. I took the advice of one of the other reviewers and switched the order of the cheese and sour cream. (Sour cream added after removal from heat). I also added chicken, which I feel is a must for this recipe. Using a pound of boneless, skinless chicken breasts, I marinated them in 3 tsp. of Pampered Chef Jamaican Jerk Rub (brushed on with olive oil) in the fridge for about a half hour, and then baked them in the oven at 350 for 25 minutes. My lady (the real chef) raved about this dish all night. 5 stars!

Parmesan Chicken
