Mexican Spaghetti Squash Stir Fry

This is like a Mexican spaghetti sauce! I did add more tomato sauce to get that consistency. Makes a great meal. I dolloped a little sour cream on top. Will make again.

Fresh Fruit Tart with Ginger Snap Crust

Yummy! I brought this to a dinner party and everyone loved it, especially the gingery crust. Note if you use soy milk you have to decrease the amount of milk and thicken up the pudding with some cornstarch. Turns out you can't make pudding set up as well with soy milk unless these adjustments are made. The lactose intolerant folks at the party were appreciative!

Lamb Shawarma

Vegetarian Kale Soup

I used beet greens instead of kale and can confirm that this soup is great regardless of the greens used. I added carrots for color and nutrition and I think it was an improvement. Otherwise followed closely. Yum!

Garlic-Lemon Double Stuffed Chicken

I make this regularly, it is so delicious and so easy! Often chicken breasts are dry and this recipe provides a way to make them tasty. Too much butter though - I had to toss some because the coating couldn't absorb as much as was called for.

Almond and Baby Bok Choy Asian Salad

I have never tried bok choy in a salad before and I LOVED it! The dressing had a great Asian sesame flavor and the texture of the bok choy, carrots, and almonds was wonderful. I omitted the croutons - they don't seem to fit with the other ingredients.

Fresh Blueberry Pie II

This is the best blueberry pie I have ever tasted. After reading other reviews I have the following tips: There is no top crust in this recipe and you won't miss it. Save it for quiche or make two pies. Also, yes you do cook the second pint of blueberries with the flour mixture. If you stick to the recipe you will not be disappointed!

Spicy Pepper-Glazed Pork Medallions

This was so GOOD and Quick. I used a dried garlic and chile blend I had for the "garlic pepper seasoning" and everything else I followed to the letter. Cook time after the initial browning was about 12 minutes.
