Garlic-Lemon Double Stuffed Chicken

I make this regularly, it is so delicious and so easy! Often chicken breasts are dry and this recipe provides a way to make them tasty. Too much butter though - I had to toss some because the coating couldn't absorb as much as was called for.

Brunch Strata

This is not a strata as there are no layers. It tastes good though. I would leave out the ham and use more mushrooms next time.

Almond and Baby Bok Choy Asian Salad

I have never tried bok choy in a salad before and I LOVED it! The dressing had a great Asian sesame flavor and the texture of the bok choy, carrots, and almonds was wonderful. I omitted the croutons - they don't seem to fit with the other ingredients.

Fresh Blueberry Pie II

This is the best blueberry pie I have ever tasted. After reading other reviews I have the following tips: There is no top crust in this recipe and you won't miss it. Save it for quiche or make two pies. Also, yes you do cook the second pint of blueberries with the flour mixture. If you stick to the recipe you will not be disappointed!

Spicy Pepper-Glazed Pork Medallions

This was so GOOD and Quick. I used a dried garlic and chile blend I had for the "garlic pepper seasoning" and everything else I followed to the letter. Cook time after the initial browning was about 12 minutes.

Asparagus Potato Soup

Really delicious - doesn't even need the bacon and cheddar. I substituted fat-free evaporated milk for the whipping cream. I also decreased the amount of chicken broth by one cup to make it thicker. It important to really whisk the flour with the milk well before adding to the hot soup slowly while stirring.

Poppy Seed Muffins

These are oily, greasy, dense almond poppyseed cakes. They do not resemble muffins at all. There is way too much oil. They were sunken in the middle instead of rounded out. I make muffins every week and was looking forward to trying this recipe but I can say that I will never make these again.
