Spinach Cheese Manicotti

My whole family LOVES this meal. My kids have asked for it to be put on the meal schedule every month, and my husband plans his schedule to be home when we have this manicotti! The only change I made was to use basil instead of parsley, but I'm sure it is delish with the parsley, too. Love stuffing the uncooked shells -- so much easier!

Lemon Delight

The cake was more dense than I anticipated, but people seemed to like it. I served it to 14 people, got several compliments, but there were a few unfinished pieces and no one asked for the recipe - which is a sure sign of a great recipe. I might make this again, I haven't decided.

Oven Baked Jambalaya

This was my first attempt at Jambalaya, and it turned out great! I tossed everything but the rice in the slow cooker for a couple of hours, then cooked the rice and served the Jambalaya over it. This dish was too spicy for my kids, though, so next time will decrease the spices. I don't expect the flavor to diminish at all!

Spanish Rice II

This was excellent. I took the advice of some previous reviews and replaced half of the chili powder with cumin. The flavors and texture were like being in an authentic Mexican restaurant. This one's a keeper!

Ting-Town Barbeque Beef Sandwich

We have this every year for my son's birthday party. Feeds lots of people, and everyone loves it! One hint - the longer you can cook the meat, the easier it is to shred. I start it the night before to make sure it is REALLY done.

Easy Apple Cider

Took this to the Christmas party for my kids' daycare, and everyone loved it -- both kids and adults! So easy and so good. Definitely a keeper. I didn't have cheesecloth, so I used a coffee filter held closed with a rubber band, and it worked perfectly.

Wonderful Banana Cake

This really is a wonderful banana cake! It has everything it takes to be wonderful -- it is easy, uses food that you almost always have on hand, and it tastes delicious! I used the frosting others recommended: one small box of banana cream instant pudding mixed with one cup of milk, and then fold in an 8 oz tub of whipped cream. The only change I made was to bake the cake as directed on the box, and it was done perfectly.

Lemon Cream Pasta with Chicken

Good basic recipe, but turned out WAY too lemony. My two year old wouldn't eat it, and she LOVES pasta. IF I try this one again, will definitely halve the lemon, either cut out adding to the chicken or to the pasta water.

Incredibly Easy Chicken and Noodles

I made this for 25 people at a birthday party, and everyone - adults and kids included - went back for seconds! One guy even commented that he couldn't find the salt & pepper so he ate it without it - but decided he wouldn't have wanted it anyway, because it was perfect as is! I didn't make any changes to the recipe other than to scale it to the amount I needed.
