My biggest challenge these days is continuing to find a way to cook a varied diet for my 2-year old who is unable to digest any dairy products. Since my husband and I love (LOVE!) cheese, this is very difficult. Plus, I find myself serving the same 6 dishes over and over. Any easy dairy-free recipes are a God-send, so I'm an avid user of the advanced search on AllRecipes.
My favorite things to cook
Anything I can prep and throw together with minimal time required babysitting the food on the stove. Any meal shared with friends or family, whether its a casual lunch after church or a big party.

Christmas cookies with my Mom and sisters (and now our kids); french bread pizza with my husband (that was the first meal he ever cooked for me); ham and cheesy potatoes on Easter (that was the first meal I ever cooked for him); DIY pizza and ice cream sunday buffet for birthday parties when I was a teenager
My cooking triumphs
besting my hubby at chili (ha ha!); Thanksgiving for 15 people just 2 months after moving to a new house; anytime its my turn to feed the hordes for Sunday School (last time it was about 60 people)
My cooking tragedies
potato soup (how much pepper did I put in?); toffee bars (what a waste of good chocolate); most attempts to duplicate a recipe creation that turned out awesome the first time (never to be recaptured, apparently)
