I am Nick. I cook out of necessity. I imagine, create, and learn in my kitchen for the fun of it. Cooking for me is the start of the experience of sitting down to dinner. It is therapeutic to create a tasty meal or create a beautiful moment especially when the stress around you sees deafening.

COOKIES, upside-down cakes, new things like this year instead of yams on the table slathered in marshmallows, I used fresh produce, and took the time to let the harmony of flavor bloom and come to fruition before serving a single morsel.
My favorite family cooking traditions
I learned a lot from my grandmother, because she insisted I cook and learn to keep house after I told her I would never be getting a married.... While she taught I talked, and here 30 yrs later I am thriving on things she taught me during basic meal prep conversations.
My cooking triumphs
2013 saw a continuation of my bi-yearly jamming chore. The recipes have gotten gradually more complex, yet the product has improved by leaps and bounds
