Rhubarb Crunch

I doubled the rhubarb and added fresh strawberries and additional sugar. Everyone loved it and it was SO simple!

Banana Oat Muffins

Next time I'll make mini muffins. This muffin is way too dense and heavy for regular sized muffins. I think I'll add less oats and a tad more sugar. I added raisins andI think that's what rally made the muffins. I will try this recipe again with my changes.

Indian Chicken Curry II

I'm not much of a cook, but I as SO impressed to think that I cooked this when I tasted it!!!! I didn't use cardamon and I added raisins. I think the raisins were a great addition. Try it!

Slow Cooker Cranberry Pork

I've made this with skinless, boneless checken breast twice so far. All I can say is ........ WOW!!!!! I usedwhole cranberry sauce and low fat french dressing or thousand island dressing.

Stuffed Brie

oops, left out a few things. I did not cut brie in half. Instead I topped the brie with the onion mixture. I baked in the oven, not microwave, and topped it with the onion mixture when it came out of the oven.

Slow-Cooker Barbecue Ribs

Taking others advice, instead of 2 cups of ketchup, I used 1 cup of ketchup and 1 cup of bbq sauce. I thought these were incredible. Also a plus, not turning on the oven or stove when it's 87 degrees!! AND such an easy cleanup. I recommend this recipe - with my changes - to everyone.

Chicken Enchilada Casserole II

I mix all the ingreients together except for the tortillas and cheese. Then I add half the cheese to the mix. Oh, I then I add fat free refried beans to the mixture too. Then I make 3 layers. tortilla strips, chcken mixture, cheese, tortilla strips, chicken mixture and the rest of the cheese. EXCELLENT. But too sloppy to serve company. That's okay. More for me!

French Toast Casserole

DEEEEEE LISH! But I cut back to 3 eggs and a tad less milk. Also following another reviewer, I poured the egg mixture over the bread cubes - cinnamon raisin bread - and let it soak in for 10 minutes. Covered it for the first 30 minutes then cooked it uncovered for another 30. I thought I'd died and gone to heaven!!!!!! I'll be making this A LOT from now on!

Curried Cauliflower

OMG!!! This is out of this world!!!! The only changes I made were: added another teaspoon of curry and used panko instead of crackers. Stuck it under the broiler for a minute or two. Couldn't stop eating it! Can't wait to make again!!!!

Oma's Fabulous Matzo Ball Soup

I just don't get all the five star reviews!! I did not like this recipe at all! I've made my fair share of matzo balls but decided to try somethiong different. I followed the recipe to a t. The only thing I changed was another reviewer's suggestion to use a potato masher. Glad I didn't make the entire amount!!! I'll stick with my tried & true recipe from now on.

Raisin Bread French Toast Casserole

I've been making this recipe once a week for about a year now. The only difference is my recipe calls for mixing sugar with the cinnamon for the topping. This is so good!!! I serve it for a casual dinner. In fact that's what we're having for dinner tonight! By the way, I use Panera's Cinnamon Raisin bread and have it sliced thick. OUTRAGEOUS! So good it should be illegal!!!!

Eggplant-Ziti Parmesan

Just made this for dinner. Made quite a few changes as soon as I read the recipe. I skipped the first step because I didn't have the time and also because my eggplant had no seeds at all!!! That's a first for me. But skipping that step didn't seem to make a difference. I also knew it needed some serious spicing added!!! Added garlic powder, basil, oregano, salt & pepper to the cheese mixture. That was a no brainer!!!. I made my own sauce and added the same spices with addition of red pepper flakes. I don't know how anyone could prepare this dish written the way it was. Of course it had no flavor!!! I also used twice as much sauce than the recipe called for. But the recipe is a good starting point. I'll make this again (with all my changes). Might even throw in some ground Italian sausage next time!!!! Now what am I going to do with all these leftovers???!!!
