Chocolate Chip Cream Cheese Muffins

Reviewed: Apr. 4, 2010
I've made this recipe several times now. First the consistency of the batter is more like cookie dough than muffin batter. Next, I usually get 24 muffins as opposed to 12. This decreases the cooking time to 14~15 minutes. While they aren't as big as the ones in the picture, they still peak over the tops of the muffin cups. Next, I've found that adding the egg to the butter/cream cheese mixture without the cream works best for overall homologous mixture. Also, 1/3 cup of chocolate chips..ppphhht! I add a full cup. I love these, they keep well for an entire week in a loose-fit container.

These are fantastic! My toddler loves them. I froze the extra and I pull out what I need the day before and put in the fridge. I will make these again.

Alfredo Sauce

Reviewed: Nov. 21, 2008
Good sauce and easy to make, but it seems to be missing something. Salt and pepper, but something else. I added ground nutmeg, but maybe garlic salt? I'll make again (it's to quick, perfect for a last minute dinner), but I'm going to tweak it some more.

Pork Chops Stuffed with Smoked Gouda and Bacon

Reviewed: Oct. 2, 2008
These were good and easy to make, just a little time consuming. I seemed to dirty every pan in my kitchen. Cooking the bacon, baking the chops - not to mention the dishes to cook the rest of my dinner. If you inexperienced like me, budget yourself some time to make these. Excellent pork chops, though!

Easy Pizza Sauce I

Reviewed: Oct. 2, 2008
I love this pizza sauce! It makes enough for two 14" pizzas. My family only eats one at a time, so I froze the remainder. I just used the leftover sauce last night and it was great!! I cut down the water to 1 cup, as well (given the amount of oil in the recipe, the extra 1/2 cup of water would have made it too runny).

Original Nestle® Toll House Chocolate Chip Cookies

Reviewed: Sep. 13, 2008
I've tried many chocolate chip cookie recipes (especially from this website) and my favorite is still the one on the back of the chocolate chip bag! This is the one I grew up with and the one that I love. I do make one modification. I use 1/2 cup butter and 1/2 cup butter flavored shortening to keep them puffy.

Chipotle Honey Roasted Peanuts

Reviewed: Jul. 22, 2008
These are fantastic! They give you the little spicy kick just at the end. I served them for a neighborhood BBQ, and they were gobbled up. I even had a couple people ask me for the recipe. I made another batch a couple days later and I keep them in my cupboard for my family. If you don't like extra "zing!", don't add extra spice. I made this exactly as written and I like things "medium" and I think they are perfect.

Uglies

Excellent concept. I can see many possibilities for variations. I suggest not using a too sweet BBQ sauce, though. I'm going to try the Italian version as someone posted below.

WOW! Chocolate! If you need a chocolate fix, this is it. Very yummy. I used half-n-half and it came out very creamy.

Grilled Chicken Cordon Bleu

Reviewed: Jun. 8, 2008
Easy and good. Can be served for company (just remove the toothpicks first) because it's very elegant, yet super simple. I made them ahead of time, then put them on the grill straight from the fridge. Turned out perfect.

Corn Bread Loaf

Very good cornbread. Not sweet (the way cornbread should be!) and just enough for my family of 3.

Very easy to make and take. I've taken this dish to several parties; I have yet to take home any leftovers. I always serve with crusty french bread.

Garlic Spaghetti

Wow! Excellent. Maybe I messed it up, but I "browned" the garlic to the point of crunchiness and the nutty flavor and zing of crunch really made this dish awesome.

Angel's Old Fashioned Beef Stew

Reviewed: Dec. 28, 2007
Good stew. Followed the recipe, it turned out kinda bland (salt maybe?). I used my dutch oven to make this, so I started it off on my stove top and finished it in a 300 degree oven for about an hour. Took it out of the oven and added the flour/water, replaced the lid and let it stand on my stove top until the rest of dinner was ready. It stayed plenty hot and thickened perfectly.

Hamburger Potato Casserole

Reviewed: Nov. 14, 2007
Make sure the soup mixture covers the potatoes and you're in business. My husband thought it was a bit bland, but he managed to spice it up on his own. The best part is that my toddler ate this. I finally found a recipe that he'll eat. Thank you!

Arrabbiata Sauce

Good and spicy. But too chunky for me. I zapped it in the blender. The leftovers freeze wonderfully.

Chicken 'n' Biscuits

Reviewed: Oct. 12, 2007
Excellent! I used canned biscuits, too. I baked the biscuits according to the can (350 for 13 minutes) first. Then I increased the heat to 400 and baked the chicken mixture for 35 minutes. I topped the mixture with the biscuits, cheese and onions and baked another 5 to melt the cheese. I wish I would have added the bacon, I'll do that next time!
