Chocolate covered cherries... Or not.

Well after the grocery store I was feeling pretty confident and decided to try the recipe for chocolate covered cherries.I used a mixture of powdered sugar, powdered cocoa, ground chocolate, butter and cornsyrup for the cherry coating.The recipe had called this mixture dough even though it seemed like a sticky, gooey, tasty mess. And melted chocolate for the coating.... I managed to make 6 of these. The dough was almost impossible to work with and the melted chocolate didn't want to stick. I have decided to try to look a couple different recipes up and try to figure out what went wrong. Suggestions welcome!

Ok so I looked a couple different places on the web and found a few recipes. I took what I thought were the best parts of each. I have what resembles chocolate covered cherries, haven't tasted them yet, waiting on them to set...

Hmm i'm not sure. I've only made chocolate covered things with just the melted chocolate. I've also dipped them in things such as nuts and coconut. I know with Strawberries they start juicing hours after you coat them so watch out for that. Also try adding a little instant espresso to the chocolate it really brings out the chocolate flavor with out tasting too coffee-y!

Definately freeze the "dough" for a little bit before trying to wrap the cherries! This makes the "dough" a lot easier to work with. Also, once the cherries are wrapped, freeze them too! This makes the chocolate stick better to them when you dip 'em. Also, melt the chocolate in a crock pot, not on the stove. Sooooo much easier that way! (I've learned all these tips the hard way. haha I made choc covered cherries, two types of cake balls, and oreo truffles this Christmas). Hope this helps!!
