Quinoa with Veggies

Reviewed: Aug. 9, 2013
I liked this recipe but I did make a couple changes. First of all, rinse the quinoa well with cold water before cooking. I cooked the quinoa as directed on the package (2c liquid per 1c quinoa) which is a cup less than the recipe states. I used beef broth instead of water. I will be trying vegetable broth and chicken broth in the future as well. By using less liquid there is no need to drain it after cooking. I used a can of garden vegetable medley (corn, green beans, carrots) instead of half a cup of corn. I didn't have garlic so I used two green onions (green part included) instead. I put them in with the peppers after they had softened up some. I didn't put salt or pepper in it because the broth is salty enough and pepper can be put on according to each persons own taste preference. I'll make it again using different liquids and veggies. It's quite tasty!

Unbelievably Easy Slow Cooker Black Forest Cake

Reviewed: Apr. 1, 2013
This was AWFUL!! There was no way of rescuing this.. it was simply a waste of cake mix and pie filling and pineapple. This didn't cook properly at all. It was more like chocolate soup. My husband loves chocolate (as do I) and it wasn't anywhere near edible. MAYBE if it was baked in the oven to begin with it MIGHT turn out somewhat edible but I did it in the slow cooker (following directions to a T) and when it didn't work I tried rescuing it by baking it in the oven. It was nothing but a waste of time.

Chicken Cordon Bleu

Reviewed: Mar. 21, 2013
My ONLY thing wrong is that I can't seem very much cheese inside the roll. That's MY fault not the recipe. I followed the recipe to a T and it's SO good! Don't change a single thing. It actually made the favorite list for my hubby and that's no easy task.

Red Skinned Potato Salad

Reviewed: Mar. 29, 2012
Best potato salad I ever put in my mouth. I didn't put onions in it because my husband can't stand them so I used onion powder instead. Even he loved it and he's kind of hard to please sometimes. Thanks for sharing the recipe!

Water Chestnuts Wrapped in Bacon

Reviewed: Jan. 9, 2012
I definitely should have read some of the reviews before making these. They weren't anywhere near done in the time stated at the temp stated and they were extremely salty. On the other hand.. I should have anticipated that they would be quite salty. They were nothing like I expected or remembered them to be. Very highly disappointed. I'm glad I only did one can. I'll try it again adding brown sugar and won't marinade them so long either. Maybe a couple hours.

Ooey-Gooey Cinnamon Buns

These are really yummy! I tend to like mine a little more ooey gooey though so next time i make them I'll use more brown sugar and cinnamon. I also put cherries on mine.

Strawberry Roses

Reviewed: Dec. 10, 2011
These things are out of this world!! Oh my gosh they're so good! None of us could stop eating them. Even the men were silent (other than moans) when they bit in to them. Yes... they're that good. I followed it to a T other than i couldn't find the mascarpone cheese so I used philidelphia cream cheese. Makes a TON of filling though... you can do way more than 16 berries. I also dipped the ends of some of the berries in chocolate, let it set, then put filling in. Awesome!!!!!

Berry Cheesecake Muffins

Reviewed: Jun. 11, 2011
These are very yummy but I think they would be better if the base muffin mix was probably doubled and the "filling" reduced. I would also double the topping... or close to it. There was too much filling to be a real filling... it was more like a layer. It's really really good but it would be better if it was in the center of the muffin instead of a layer on it.

Bacon Corn Chowder

Reviewed: Jun. 11, 2011
I made this with cubed ham because I had no bacon. I also used chicken broth instead of water. I added instant potato flakes to make it a little thicker. This really is very tasty! I'm going to use bacon next time because I think it would really add to the flavor and make it as the recipe states. I think it would be so much better.

Blueberry Cream Cheese Pound Cake I

Reviewed: Jun. 7, 2011
I don't know what went wrong but this cake is a COMPLETE disaster! Only thing I did different than the recipe stated is I used a lemon cake mix instead of a yellow one and I used a bit more blueberries (2 cups). This cake took an hour to bake (close to it anyway) and when I took it out of the pan it STILL wasn't cooked. I put it on a cookie sheet and put it back in the oven. I will NEVER make this again. What a waste of perfectly delicious berries. I've never been so disappointed. I wouldn't even give this recipe a 1 never mind 5.

Consomme Pork Chops

Reviewed: Jun. 6, 2011
I really liked this! The rice was a little mushy but I didn't use long grain rice either. I probably could have cooked it for an hour instead of hour and a half (I added extra liquid) and it would have been pretty close to perfect. I did use seasonings we like instead of salt and pepper... very yummy

The Best Banana Bread

Reviewed: Jun. 2, 2011
I absolutely LOVE this banana bread! I made it exactly as recipe says and it's wonderful. It's a little crunchy on the outside and deliciously moist inside. It's got the mild banana flavor I was looking for without the walnuts overpowering it as it is in some recipes. This banana bread is...... perfect. Only thing is I had to bake it an extra 15 minutes (total of 1hr 15 min) but that could be due to varying oven temps, type of pan, or a number of other factors. I wouldn't do a thing to change this. Thank you SO much Libby!

Best Ever Blueberry Cobbler

Reviewed: Feb. 28, 2011
I made this tonight exactly as the recipe states and it's really quite yummy! It's the first time I've made a cobbler of any kind and it turned out great. Oh... woops... I didn't make it quite as stated. I put one LESS tablespoon of sugar on the berries. That's the only change I made. It wasn't too sweet or too bland. I think I'll try using fresh juice next time and a little of the zest tho.. just to give a little more tang to it. That's my personal preference tho. This was as close to a perfect cobbler I've had yet.

Grandma's Gingersnaps

Reviewed: Dec. 7, 2010
Very tasty cookie but nothing like what I expected. There was no way that dough was the right consistency to roll and so they were drop cookies. They spread out a LOT. I don't know why this happened as I followed the recipe exactly. I'm searching for an answer to that very predicament. They do taste good though.

Coconut Ambrosia Salad

Reviewed: Oct. 9, 2010
Made this pretty much as stated except that we liked how it was tasting and looking so much that we added a little more of everything (without actually measuring). This was SO good! No one could stay out of it. We didn't add enough of anything to really drastically change this recipe so I would have to say to make it just as the recipe states. Very easy to make too. I'd never made it before and I love how simple this is! Just put everything in a big bowl and mix... doesn't get any easier than that!

Sauteed Green Beans

Reviewed: Oct. 9, 2010
These were good except for just a couple issues. One.. the almonds burned. Two.. the only time it states a temperature is in the first step while cooking bacon. To remedy I would suggest the following: Cook the bacon and remove from skillet. Add the butter and the almonds. When almonds are golden brown, remove them and add the beans to the bacon drippings/butter mixture. Reduce to medium heat to cook the beans and stir them often. Crumble the bacon when it's cool enough to do so. Add bacon and almonds back into the skillet for the last two or three minutes of cooking (to reheat them). I will definitely make this again with the above modification. Very tasty and easy to make and everyone liked them.

White Chip Chocolate Cookies

Reviewed: Mar. 29, 2010
Just made these tonight with a little variation. I used 1 cup white and 1 cup brown sugar. Other than that I made as stated. The dough seemed a little "heavy" I guess you could say. Unlike most other cookie dough I've worked with. I wasn't sure how they would turn out. They turned out fabulously! Only thing I will change next time is putting LESS white choc chips in it. They don't all mix in well at all. The cookies are wonderfully soft and chewy! The DH actually rated them 4.5.. a first for him! He said they're just about the best cookies he's ever put in his mouth.

Kentucky Banana Pudding

Reviewed: Mar. 8, 2010
Made this for my hubby tonight (hoping it would be like the banana pudding he's use to). He said it was very good but he thinks maybe I let the pudding get too thick before pouring it over the bananas and wafers. He will NEVER give a recipe a full five star rating so in order for this to get four is really saying a lot! I will definitely make this again. Next batch will be for Easter. Thanks for the recipe!

Alienated Blueberry Muffins

Reviewed: Jan. 26, 2010
I made these today and the hubby taste tested them. He rarely gives anything a 5 star rating. This time is no exception. He said the only reason they don't get a 5 star is because all the fruit settled at the bottom. I found the batter quite runny compared to standard batter and even tho the pans were sprayed with baking spray, they came out of the pan very difficult and they don't appear that nice brown color on the bottom like they are on the top. They didn't puff up like muffins usually do either. Very yummy though! I don't know if maybe I should add a little flour next time? Definite potential for a 5 star.

Whipped Shortbread Cookies

Reviewed: Dec. 23, 2009
I made these a couple days ago and, although they do indeed melt in your mouth (as whipped shortbread should) I found they need more sugar and perhaps vanilla extract or maybe a little of the cherry juice to sweeten and add flavor. They tasted a little "floury". As one other reviewer stated, they are very fragile and crumbly.. but you need to expect that if you want WHIPPED shortbread. I also found these ones spread out a little more than I expected but I think that's more my fault than the recipe. Over all it's a good recipe and very easy to make... just maybe more sugar and a little splash of vanilla.
