Rosemary Ranch Chicken Kabobs
I made this with pork tenderloin rather than chicken and it was absolutely divine! Even my extremely picky father in law liked it so much my mother in law asked for the recipe!! I also halved the salt (because I have to), halved the sugar because I had made it with chicken before and thought that was enough, otherwise followed the recipe. Warning: the marinade on its own does not look very appetizing, but persevere! It is delicious!

Simple Roasted Butternut Squash
This was so good! I usually add other stuff (like cheese) to squash, but hubs is on a diet so I wanted to make something without the extra calories. This fit the bill - the only change I made was to use garlic powder rather than fresh (didn't have) and added a sprinkle of Madras curry powder for a little kick. I cooked at 425 for 20 mins, and turned the pieces after 10. Magical - hubs and I were both stabbing with our forks for the last few pieces in the serving bowl!

Braised Balsamic Chicken
Wow, this was delicious! Used tenders to save time. Used sherry wine vinegar rather than balsamic. And used 1C chicken broth rather than the diced tomatoes (relentless children who believe tomato must be pureed to be edible). I made a lot, thinking the leftovers would make a great chicken salad. I still think so, but I'll have to wait until next time to try because the chicken totally disappeared. And hubby spooned the leftover sauce over his baked potato. Thanks, MoonAndBack!
