Brown Sugar Meatloaf
Easy tip for lowing the fat content of your meatloaf and not having to constantly drain your loaf pan: Once all of your ingredients are stirred together in your mixing bowl, mash them down into the bowl to create a solid mass of meat. Then turn the bowl over onto a broiler pan with a little water in the bottom layer of the pan. The bowl shape creates a nicely shaped round loaf of meat that will not fall apart if you compacted it well. Spread the brown sugar and catsup on top. As it cooks, all the grease from the meat will drain into the bottom of the broiler pan and the top will come out delicious. It is still moist, but not greasy. And you can slice it like a pie for a nice presentation.
