Buffalo Chicken Dip

LOVE IT! Used 3C of Rot. Chicken shredded, 1C Wishbone Fat Free Chunky Blue Cheese, 1C hot sauce, 1/2 stick butter, 2 pkgs cream cheese, 1.5C shredded Colby/cheddar/monteray cheese. Baked at 350 for 10 min. Served with Frito Scoops. Definate Football Favorite!

Filet Mignon with Bacon Cream Sauce

Sauce was amazing! Went 1/2 cup up half & half & added a little sour cream. Also, served it with thick sliced beef tomatoes drizzled w/balsamic & olive oil & mashed potatoes

Chicken Enchiladas

Loved these! So easy & used up tons of stuff in my fridge & cupboard! Mixed 2C rotisserie chix with 2T fajita sauce, added 1/2C of fat free sour cream, 1/2C salsa, 1 can pinto beans rinsed & drained & mashed. Mixed all together & placed a heaping 1/2C onto each tortilla then 2T nacho & taco shredded cheeese, topped the 4 tortillas with a whole 8oz bottle of Enchilada sauce, 1/2C shredded cheese, 2T chopped green onion & 2T sliced olives. Cooked @ 350 for 15 min. YUM!

Maple-Soy Glazed Salmon

Amazing! For 2 people, chose to broil @ 450 instead. Used 1.25 lbs salmon fillet & cut in 1/2. Skinned it & rubbed salt & pepper on both sides. Seared all sides on stovetop in olive oil. Dbl the glaze amt (used 6 svg measurements) cooked on stove & added cornstarch to thicken. Broiled salmon on broiler pan for 8 min, taking it out every 2 min to baste generously with glaze. Served with brown rice & mixed veggies & extra glaze. YUMMY!!!!! Thank you!

Chicken Marsala

1/2tsp ital seasoning & garlic powder to flour. Add garlic when browning chix, dbl sauce, triple mush, thicken with leftover flour mixture. Serve w/garlic mash potatoes. Loved this!

Absolutely loved this! Cutest recipe ever! 5++ stars for presentation! Used grd bison to make it healthier. Served it over Yukon mashed potato with asparagus trees. Shredded Cabot seriously sharp cheddar on top for last 2 minutes. Froze the rest for later. Yum...

Pesto Chicken Florentine

My hubby & I absolutely loved this! I tweaked it a bit. Had no spinach, so I used fresh asparagus. I seasoned the chix with Bayou Blast. Seared for 5 min ea side & added some cut cherry tomatoes & red pepper to pan while cooking. Microwaved asparagus for 1.5 min & chopped. Added to pan at end. Used 1.5 cups of alfredo & 3T basil pesto to box of penne. Sprinkled top with romano & asagio.

Chicken Asparagus Roll-Ups

Loved this! As other reviewers mentioned, I put 1T of sauce in middle, a slice of proscuitto, swiss cheese, 7 asparagus & used marjoram instead of tarragon. Did not have panko bread crumbs, so I crumbled a roll & mixed it with stovetop & regular bread crumbs.

Unbelievable! Myhusband said it tasted like Bertucci's. I subbed provolone for fontine. Next time I will sprinkle black pepper on tomatoes and try fontine.
