Hoppin' John Skillet

I was looking around for something to use my black-eyed peas in and came across this. It came out really nicely, and quite tasty indeed! I did end up replacing a few things based on what I had on hand. Lacking bacon, I browned up a couple of spicy beef sausages (diced) and a bit of ground beef to make it a little more dynamic. I also added in some diced green pepper and went with white instead of brown on the rice (a preference thing). I used dry peas that I soaked and cooked beforehand and skipped on the tomato, and only used the cheese as a topping (which ended up getting mixed in anyway). It struck me as a sort of a down-home Southern style jambalaya. It's definitely going on the menu again!

Hot Italian Giardiniera

[FIRST TIME:] I let it sit for most of a day before trying it for the first time... and now I can't stop eating it!! [MANY MOONS LATER:] It's been forever since I made this the first time, and have been looking forward to having the time and workspace to do it again. Reading another review and remembering my first batch, I did a little research. Safflower oil ought not to solidify in the fridge. I'll let you know in a few days.

Beer Pancakes

Well, let me tell you... the batter tastes awful, but the pancake tastes delicious! I made mine with half-white, half-wheat and a Bud Light. It occurs to me that these might also be very good with a jam or jelly.

Basic Crepes

Great recipe! Works well for savory and sweet crepes alike. Here's a hint, though... if you like them especially deserty, add a bit of sugar/sweetener and a splash of vanilla. ;)

Ultimate Valentine's Day Chocolate Truffle

While I could not manage to make actual truffles out of this recipe, the resulting spooned-out blobs that were delicious. As far as thinning out the dipping chocolate goes - try adding some Kahlua (or similar liqueur) and milk as needed to thin & flavor the chocolate. Add flour back in if you want more flavor.

Potato Pizza

This was a pretty good recipe! I don't have all the topping ingredients, so I made it an all-around potato pizza. The shredding of the potatoes and onion were very time-consuming. I squeezed them dry with paper towels. I must have used fairly large potatoes, because I ended up using 3 eggs and a full cup of flour to make it all stick together. Not owning any round pans, I made it on a regular cookie sheet with sides. I sauced it half with pesto (ran out) and half with pasta sauce. Toppings included 4 sm/med sliced potatoes, two chopped sausages, mixed sliced bell peppers, and chopped onions, covered with mozzerella cheese.

Bacon Cheese Muffins

These are awesome! I had one to check for doneness and one to snack on not long after. :D I added in some onions and, lacking shredded cheddar, chopped my own monterey-jack. Noting the reviews reporting a floury taste, I subbed about half a cup of cornmeal. I seasoned with some cayenne, rosemary, thyme, garlic salt, and pepper. With the extra content from the onions, I also compensated with a touch more of the dry ingredients and a splash more of milk to make them fluffy. They turned out great and sat in the freezer overnight. The boyfriend and I each grabbed one and nuked it for breakfast, and they are still good!

Pumpkin Pancakes

These are wonderful! They taste so much better than the ones they had at IHOP. I added chocolate chips in, and they were a hit! I had mine with whipped cream and my boyfriend tried it with ice cream. Both are great. P:

Quick and Easy Alfredo Sauce

Wow! I made my pasta, left it in a bowl, and made my sauce in the same pot without even washing it. It was done before my pasta even got cold. It's so amazing to think that my having tossed a hunk of butter, some cream cheese, a splash of milk, and a sprinkle of garlic salt could have come out to be so utterly delicious! I'll be using this recipe again and again. Thank you!

Chicken Curry III

I made this for my boyfriend. I pretty much only used it as a basis/reference to make it my own. But what I came up with got a 10/10 rating from him. I also gave some to my friend and she flipped out. I used half a package of chicken breast, half a large potato, half a yellow onion, a can of coconut milk, just a splash of regular milk, and 3 tbsp of Madras curry powder. We like things spicy, so if you like it a little milder, cut back to 2. If it comes out unbearable, you can add some more milk in and let it reduce until it feels right. It came out with a beautiful yellow color, and my hands smelled deliciously of curry afterward. Served over rice, it makes for a great introductory Indian dish.
