Easy Decadent Truffles

These are delicious and easy. I rolled some in cocoa, crushed holiday-spiced almonds, pretzels and powdered sugar. Roll them bite-sized because they're super rich.

Awesome and Easy Creamy Corn Casserole

Delicious! And super easy. I've made it for holiday dinners with rave reviews. Tonight, I made it instead of cornbread to go with a big pot of chili. Yummy!

Good Burger

My kids gave these 5 stars. They are sweet. The brown sugar comes out and makes a sort of sweet glaze on the burger. Something different.

Exquisite Pizza Sauce

Easy and delicious. Why buy sauce in a jar when it's this easy to make your own. I skipped the cayenne and the red pepper flakes because I made the sauce for kids' pizza. A keeper.

Classic Fish and Chips

This is a good recipe if you are doing cafeteria-style supper, where each person takes his or her fish right from the fryer and eats it. If you wait until they're all fried to serve, the coating is already soggy. Tasty though.

Screaming Potatoes

I bought a cast iron skillet just for this recipe and was disappointed. I may have used too much water. I ended up with basic steamed potatoes. I'll try it again with exactly two tablespoons of water and see what happens. If it turns out the same though, I'll remove this one from my recipe box.

Best Brownies

I thought these were very good. They are a deep, rich, homemade brownie. My kids, however, thus far raised on box mixes, missed the gooey, half-baked consistency of boxed brownies. What do they know anyway?! :-)

Judy's Strawberry Pretzel Salad

My crust got very hard. I left the pretzels in smallish pieces instead of crushing them to dust and the pieces were too hard for my elderly family members to chew. They requested a second try with a graham cracker crust. I will be using more strawberries for that one, as the jello parts that had none in it reminded me of eating a spoonful of jam. Tasty, but needs tweaking.

Broccoli and Cauliflower Casserole

This was a little time consuming using fresh vegetables, but the end result was FABULOUS! I was informed that it is a keeper for holidays. I doubled the recipe because we weren't sure how many guest we'd end up having. I ended up with way too much so I packed supper-sized servings in Seal-A-Meal bags and it froze beautifully. Tasted fresh made when reheated!
