Sweet Potato and Black Bean Chili

Having recently turned vegan due to a heart attack i was glad to find this recipe.The roasted sweet potatoes are awesome by themselves had to force myself to stop eating them after they came out of the oven.I followed the recipe pretty much as written but i didn't add any jalapenos instead i pureed chipotle peppers in adobo sauce and add a little at a time till i think it's at the correct spiciness.Next time i may add some mushrooms or corn this is such a good base for endless modifications ; )

Smoky Chipotle Hummus

I'm with Savvyhostess why buy overpriced hummus at the store (Wally World store brand chickpeas are only 68 cents a can)when it is so easy to make plus it tastes better.I made it pretty much as written but of course not exactly.I see no point in draining the beans and adding water back to it.Why not just use the liquid that is in the can?I also puree a can of chipotles in adobo sauce and add one teaspoon at a time until i get the heat level i want.So much better than that bland stuff premade from the store ; )

Key Lime Cheesecake I

I love Key Lime pies so i thought i would love this and i did.So did everyone else at the potluck.They loved it so much there wasn't any left for me to take home.I have another one in the oven as i write this.Since i love limes i used a whole cup of fresh lime juice,1 1/3 cup of sugar and all the zest from the 3 large limes.I also used a gingersnap crust from the ginger spice cheese cake (which is also very yummy) that is on this site.We shall see if i get to take home any leftovers ; )

Pumpkin Pancakes

My grand son (as well as the rest of my family)loves these pancakes.I have also tweaked the recipe by using the whole 15 oz can of pumpkin,so there isn't any left over.I use half whole wheat flour half white add a1/3 cup milled flax seed.I also add more milk as needed.I mix it the night before except for the vinegar which I add while I am waiting for the skillet to warm up.I like mine topped with apple butter.IHOP can't touch these!
