Chicken Tortilla Soup III

Awesome! I added some chopped avocado. It was fabulous and made great leftovers. Thanks so much for this -- it's almost as good as the tortilla soup at La Chopa Loca in Cozumel, Mexico!!!

Garlic Mashed Potatoes Secret Recipe

This is an INSANELY GOOD recipe. I've never had better mashed potatoes (well, next to my grandmother's, anyway -- and I don't have her recipe!). I'm not even a huge garlic enthusiast (although my husband is), and I couldn't get over how wonderful this dish was. Everyone raved. Thanks so much!!!

Chili Cheese Dip III

Sinfully Delicious Chocolate Pie

This recipe is similar to one I used to use from the Better Homes and Gardens cookbook -- but they stopped publishing it because of the raw egg content. Of course, I lost the recipe I had! It's a great recipe. I use a graham cracker crust instead of the regular pie shell. And, the more expensive, finer sugar IS better -- otherwise it can be a bit on the grainy side. Thanks! :)

Quick and Easy Alfredo Sauce

This is perfect, Dawn. Finally an alfredo sauce with a little zip to it. My husband always says alfredo is tasteless and watery -- this one definitely was neither. We really enjoyed this and used it with spinach fettucine noodles and sliced chicken. Thanks! :)

Southwestern Egg Rolls

Great! It's nice to be able to freeze an appetizer ahead of time -- all you do is pop them in oil. They tasted like something you would find in a restaurant chain -- I got a lot of compliments! I used flour tortillas, but next time I might try regular egg roll wrappers to cut down on time. Either way, DELICIOUS!

Baked Corn

Delicious! Everyone raved about this dish! I used the leftovers for a breakfast casserole -- you can layer it with crumbled sausage and/or bacon, along wth scrambled eggs and cheese. It also makes a great Mexican side dish -- just add about 1/2 cup more sour cream. YUM!

Artichoke Spinach Lasagna

This is a wonderful recipe. Instead of mixing the artichoke/spinach mixture with red sauce, I mixed it with jarred alfredo and added shredded rotisserie chicken. Then, I added a red sauce in between layers with the mozzarella. GREAT! I will definitely make this again and again, especially for guests.

Butter Brickle Frozen Delight

UNREAL! I made this for a dinner party and everyone went crazy for it. No one complained about it being too sweet or rich -- just cut it into smaller pieces. Plus, you can't beat it for a make-ahead dessert! Thanks!!!!!

Easy Key Lime Pie I

I topped this with a nice thick layer of whipped topping and served it with sugared lime slices. Delicious, with just the right amount of tartness/sweetness. A good summer dinner party dessert! Thanks!

Feta Cheese Foldovers

This is a wonderful recipie! I've used these several times as an appetizer for dinner parties -- every time I get requests for the recipie. Absolutely wonderful served with fresh fruit -- white grapes, strawberries, or honeydew melon! THANKS!

Sour Cream Pork Chops

I'm not sure what I did wrong, but these chops came out fairly dry. I expected them to be fall-off-the-bone tender. Also, the sauce was quite thin. Maybe I needed to add a thickening agent...

Ronaldo's Beef Carnitas

I tried these in a slow-cooker instead of the oven and they were FABULOUS!!! My husband always orders carnitas at our favorite Mexican restaurant, and he said that these blow everything else he's had out of the water! THANKS, Miss Annie!
