Tiramisu Cheesecake

awesome texture and awesome taste - it was great! I made it in a smaller springform pan though and lined the side of the pans with ladyfingers, and also put a little bit more of the coffee liqueur. Topped with whipped cream then shaved Godiva chocolate~ heaven!!

instead of rolling the dough out i piped it though a star tip and topped with a piece of candied cherry - i brought them to the office and they were gone in a flash!

Big Soft Ginger Cookies

these cookies came out good but i was expecting more ginger flavour and a softer texture *update* made them again and doubled the ginger, added 1 tsp or so water and baked them at 340F instead - came out great!!! made awesome ice-cream sandwiches!!!

Indian Relish

This is somewhat of a misnomer - there isn't really anything "indian" about it - but it is amazing - we had it in hamburgers, hot dogs, on cream cheese & crackers, even with fresh pineapples - and it was great everywhere we used it!! I did have problems with it not thickening - but that was easily fixed by adding some cornstarch in water as suggested by other reviewers. And i have to admit that i had to change things quite a bit to suit what i had on hand - substituting celery for onion, rice vinegar for white wine vinegar and chopped fresh thai chili peppers for the crushed chili pepper flakes - but it was still awesome!!

Coconut Icebox Cookies

was looking for something more crispy but these still turned out pretty well... i made 4 logs and froze them, and it was such a breeze to make them when i'm craving for a little treat... just slice and bake for 5 min in my toaster oven. it's great because i can bake as much or as little as i want, and they're usually gone before the end of the day.

Lemon Poppy Seed Biscotti

the dough was crumbly and definitely took some work to form into logs - wetting hands first helped a lot. I was worried about the logs being too thin (less than 1/2" tall) but they puffed up nicely in the oven. i took the advice to use up the yolks as an egg wash and got a really lovely yellow color, but i think i will skip that next time because it tasted too "eggy". really nice crunch, but not enough of the lemon flavour - will have to up the amount of zest and extract next time.

Almost No Fat Banana Bread

perfect with just 1/2 cup of sugar, upped the cinnamon and used whole eggs rather than just whites (=nothing wasted!!), and also added 2 tbsp of flaxseeds. baked only 20 min in mini muffin pan topping each with a walnut half and they came out great!! yummy low fat treats!!
