About this Cook
i started with the ladies at work to take turns bringing in a salad for lunch and discovered many different cuisines and tastes. Since there are vegetarians among us, our salads do not contain any meat and we try to stay away from eggs as well. The meat is not missed at all - the salads still turn out amazing!!
My favorite things to cook
my cooking is very limited to desserts and appretizers - the kitchen's still mom's domain. But i like to experiment with new flavours and with ways to make things easier.

Indian Relish
This is somewhat of a misnomer - there isn't really anything "indian" about it - but it is amazing - we had it in hamburgers, hot dogs, on cream cheese & crackers, even with fresh pineapples - and it was great everywhere we used it!! I did have problems with it not thickening - but that was easily fixed by adding some cornstarch in water as suggested by other reviewers. And i have to admit that i had to change things quite a bit to suit what i had on hand - substituting celery for onion, rice vinegar for white wine vinegar and chopped fresh thai chili peppers for the crushed chili pepper flakes - but it was still awesome!!

Almost No Fat Banana Bread
perfect with just 1/2 cup of sugar, upped the cinnamon and used whole eggs rather than just whites (=nothing wasted!!), and also added 2 tbsp of flaxseeds. baked only 20 min in mini muffin pan topping each with a walnut half and they came out great!! yummy low fat treats!!
