T's Sweet Potato Fries

Definitely needed to cook longer so they weren't soggy, but the flavor was good. A healthy, sweet alternative to fries!

P.J.'s Fresh Corn Salad

Great side dish for a brunch or BBQ. My grandma loved it and even asked for the recipe! I used a can of Niblets corn to save time and added a bit of minced garlic, salt and pepper.

Favorite Peanut Butter Cookies

I made these cookies using a banana-peanut butter blend I found at a local orchard store. Don't overcook and they'll be soft and delicious!

Lima Bean Medley

I used 1/2 a can of diced tomatoes and dried basil. This dish is easy to make and has a nice texture - a great way to incorporate lima beans! Next time I'll add more garlic/spice.

Spinach Dip with Water Chestnuts

This is a good base recipe - there's one similar on the back of the Lipton Vegetable Soup Mix packet. I changed it up a little. I skipped the green onions (but added a little minced garlic), cut the mayo in half and replaced it with cream cheese. I think I also added a little parmesean and a squirt of lemon juice. It was a big hit at the company luncheon! Make sure you drain the spinach well and don't skip the water chestnuts. Serve with Wheat Thins.

Pat's Baked Beans

I skipped the bacon (gasp!) and threw this recipe in the crockpot and it turned out wonderful. The whiteness of the garbanzo beans makes it interesting...intriguing? scary? I guess you either love 'em or you hate 'em. I thought it was a nice touch.

Simple Hamburger Stroganoff

I thought this recipe was just okay, but my husband liked it. The sauce was thick even with only 1/2 the cream cheese. It just seemed to be missing something in terms of flavor...I may try to find another similar recipe or switch this one up a bit.

Texas Caviar I

I've made this dip numerous times, but I usually skip the green onions, cilantro and coriander because it's not something I keep on-hand. It's always a crowd pleaser. Use red onion for color and throw in a can of Rotel instead of the cherry tomatoes. Goes great with Scoops. Yum!

Sesame Green Beans

I used fresh green beans and added a little a soy sauce and they were fantastic. I even got a compliment from my grandmother who said she can never get fresh green beans to cook perfectly!

Savory Glazed Meatballs

I've made these meatballs twice and they are a HUGE hit. I use frozen meatballs - Italian style works fine - along with a jar of grape jelly and a jar of Bennets chili sauce. I usually add a tbsp or so of yellow mustard to the sauce mixture when I'm heating it on the stove. Delicious. I already have these items on hand so I can bring them to the next potluck!

Stuffed Peppers

I made this recipe using 10-minute brown rice and lean ground beef. I added minced garlic and onion for flavor and I blanched the peppers for one minute before stuffing. One bell pepper was plenty for two people (we had veggies and salad, too). Will make again.

Pumpkin Cheese Ball

I made this for a family BBQ and it seemed to go over pretty well despite the odd combination of ingredients. I served with carrot chips and wheat thins. It makes a ton! I will definitely make it again.
