Joel's Jerk Chicken Pineapple Pasta

one of the few meals ive made in recent memory that ive actually been able to eat my entire serving of and go back for more. seriously enjoyed this. served it over some coconut lime rice instead of pasta because thats just weird... and used a 20oz can of pineapple chunks in juice instead of 8oz, eyeballed the spices, used less cinnamon than called for. perfectly delicious!

Coconut Chicken Stir Fry

made it for the second time tonight and its still pretty good, i think the first time i made it i threw in some snap peas. followed the recipe exactly tonight except i dont have cumin seed so i just heated about 1/4 tsp of powder in its place and halved the chicken breast and onion. left everything else at its regular measurements. mixed up a batch of my own improvised coconut rice. definitely a keeper, and im not even a huge curry fan.

Chef John's Pumpkin Cinnamon Rolls

made these today to go with my giant pot of chili... got a few things that are wrong with the original recipe.. i tried making it as written, except using bread flour instead of all purpose. after 3 cups of the flour was added the dough was looking pretty dry. i added the rest of the flour, another egg and about 1 tbsp of milk to moisten it up a bit more. i dont know if it was so dry to begin with because the different flour... also used 1/4 cup milk and no sugar instead of water with sugar added to proof the yeast before adding the wet and drys. the frosting is incredibly drippy. i like thicker cream cheese frosting on my cinnamon rolls so i adjusted it in an attempt to thicken it up.. didnt work too well, but did help a little. i also only added about 1 tbsp of milk to the frosting. 1/4 cup would have definitely been too much. baked at 350 for 15 minutes and they came out perfect. given all the changes i made, its a 5 star recipe.. but as written, it was a huge pain in the butt... had i not changed anything, it'd most likely be a 3 star at best so thats how i will rate it.

Baked Ziti

so good, i dont normally like pasta bakes (not a big red sauce fan) but this is like a simplified lasagne. went together easy and tastes delicious. i followed the recipe to a T, except i used a little parmesan and feta on top along with the mozzarella. everything else is as is and i wouldnt change a thing.

Baked Lemon-Basil Pasta

so good, followed recipe except i used 2 chicken breast and put a little of the cheese in the sauce mix, used butter instead of margarine and less of it.. and coconut oil since i didnt have any olive oil. definitely making this again.

Salsafied Chicken and Rice

4 stars as written, i added taco seasoning and corn to the mix, meant to throw in some black beans but forgot. i think it would lack a little flavor without the taco seasoning. great base recipe though and very easy to tinker with and improve. can always add different things each time you make it. also very easy to throw together, wich i loved. keeping this one.

Teary-Eyed Fried Pork Chops

so good! followed recipe except i scaled it down for 2 and baked the chops after coating them with the hot sauce. also eyeballed the garlic/pepper/salt/cayenne. served with mashed potatoes and gravy made with the leftover flour mix, super spicy and super yummy. like buffalo pork chops. so good i even ate the fat trim bits wich i never do but i couldnt give up any of the meaty bits.

Pork Tenderloin with Dijon Marsala Sauce

didnt brown it before baking and used onion instead of shallot since thats what i had on hand, otherwise i followed the recipe to the T and it turned out great. the sauce is so tasty. i cant wait to eat the leftovers.

Beef Stroganoff III

followed recipe exactly (except cooking directions, went ahead and cooked beef and onions together) and it turned out perfect. still tastes like your run of the mill stroganoff minus the soupy taste you get from using canned soups.

New England Clam Chowder I

perfect! added 3 cans of clams (6.5 oz each) and all the juice from them, 2 cups of half n half then 1 cup of cream for thickness and mixed up a little roux to help thicken as well. was still really soupy but the flavor was awesome. i only wish i had a sourdough bowl to eat it out of. finally some leftovers i can look forward to

pretty good, only changes i made was i added a little garlic and asparagus in with it, halved the recipe because its just 2 of us. normally i like to follow recipes exactly the first time i make them that way my reviews can be true, but this would have just been incredibly bland without the garlic and veggie. still good though!

Braised Balsamic Chicken

just finished eating this. i was surprised at how much i liked it. i used rotel lime and cilantro tomatoes because its all i had in the cupboard, diluted the balsamic vinegar with maybe 2 tbsp of chicken stock, and then about 1 tsp of brown sugar in the pan to tone down the tangyness of it. definitely going to be doing this one again.

Angel Hair Pasta with Garlic Shrimp and Broccoli

fixed this for dinner last night. followed the recipe exactly except i left the salt out (can salt my own if it needed it, and it did need it lol). i enjoyed it. a dash of hot sauce and a dash of worcestershire wasnt enough to really be able to tell they were even in the dish.. so next time i might do a teaspoon of each and see how it is like that.. reheated some leftovers for a late lunch today and i was expecting it to separate like most white pasta sauces do, but it held together perfectly. tasted as good as it did last night when it was fresh and no greasy butter trails running down my chin. i think it would also go great with asparagus in place of the broccoli so i might try that next time. definitely a keeper. cant wait to cook it for my husband!

Asparagus, Chicken, and Pecan Pasta

i made this on valentines day and it was great. followed the recipe exactly, except i halved it and i forgot to put the butter in.. but i didnt miss it. subbed the pecans with sunflower kernels since i dont like pecans. so good.
