Greetings, fellow foodies! After a few years of visiting religiously, I finally became a supporting member and I am so excited! A little background about me...I am currently a college student (go Hoosiers!). I live in a small apartment with my fiance and two dogs but I have managed to crank out some pretty awesome meals from my small kitchen! I have loved cooking as long as I remember. I started baking with my grandma when I was very small and then slowly branched out into other culinary areas. During college I have gained a small following of people who insist I am a great cook, and who am I to turn down the compliment?! I enjoy cooking all kinds of things but my specialties include lasagna, spaghetti, macaroni and cheese - anyone else see pasta as a running theme? I LOVE pasta. And cheese. Almost any combination of the two. But recently I have been searching for healthier ways to cook (not that pasta and cheese can't be used in healthy ways, I just don't know any yet) and am anxious to uncover new specialties. Until my next food adventure, I will leave you with the first recipe to ever become my specialty and gain me a small cult following. I cannot take credit for this recipe - in fact I think I saw it on a box once - and, dare I say, it can by no means be considered health food, but boy is it ever delicious!

Queso Dip

1 pound pork sausage

1 can Rotel tomatoes and peppers, drained

1 loaf Velveeta cheese, cubed

Crumble and cook the sausage. Put Velveeta, Rotel, and sausage into a Crock Pot and cook on low setting until melted. Serve warm with tortilla chips.

Thats very close to my fav dip, but I use cream cheese instead of velveeta. I think I am going to try this one, it sounds good :) Anyway, welcome!

I just spent the weekend in your state and I had a blast. What a finish to the race. That being said - welcome. Everybody loves queso it just doesn't work with my diet. You will find plenty of ways to eat healthier. Make sure to go to the Buzz - lots of help over there too.

Your dip sounds great! Will try soon. As Doug says, go to the top of this page and click on thebuzz. A community of people able and willing to help w/ most ANY kind of cooking, baking, grilling, etc. question you have. Hope to see you up there sometime!!

Thank you everyone! I will definitely check out the Buzz. It sounds great! Jennifer_a00 - cream cheese might be a nice change of pace! Maybe I could use light cream cheese and make it (slightly) healthier. Now I have something to experiment with :)
