Cream of Sweet Potato Soup

It's nice to see healthy sweet potatoes as the main ingredient in a dish aside from just the Thanksgiving sides and this recipe fills the bill. I made the following adjustments: used 1/3 c FF evaporated milk instead of the cream, and added roasted pumpkin seeds as a garnish. Served with fresh pita chips. DELISH! Thanks for the recipe.

Brussels Sprouts Salad

Instead of cooking the sprouts in water on the stove I roasted them in the oven on a cookie sheet with 1/4 c. olive oil at 385 for 20 mins. I let them cool, put them in a serving bowl and added the dressing and put them in the fridge for a few hours. AWESOME! I'm sure roasting the sprouts on the grill would be great, too.

Deviled Eggs

Very good. I used 1 tsp honey mustard in lieu of the yellow mustard and omitted the sugar. This made it sweet but added a little extra tang. Sprinkled fresh nipped dill on half the eggs and put the traditional paprika on the other half. A hit.

Carrot Cake VIII

Huge hit for Christmas! I used whole wheat pastry flour and the Cream Cheese Frosting II recipe on this site. Fabulously dense, moist and got raves from the family and made a nice presentation in the bundt format. Thanks!

Italian Vegetable Soup

This hit the spot for our first soup of the fall. I made it in the crock pot, using vegetarian Italian sausage cut into 1/2" pieces in lieu of the ground beef and did not add the pasta. Other than that, I followed the receipe to the letter. MORE than enough leftovers to look forward to for lunches this week. A keeper.

Paul's Pumpkin Bars

These got RAVE reviews from all who ate them. I used ~ 3/4 C Smart Balance oil and substituted 1 tsp of Pumpkin Pie Spice for one of the tsp. of cinnamon. This is a nice recipe for the fall. Thanks for sharing.

Fruit Salsa with Cinnamon Tortilla Chips

I made this for a picnic. There were about 40 people there. 30 of them wanted the recipe. The other 10 were too busy eating the salsa & chips to ask. I added blackberries to the mixture because I had some on hand from the Farmer's Market. They added color & a bit of tartness/texture. Definitely a "make again"!
