About this Cook
I have been living in China for a while and have been loving it! If only I were as excited about the food... I am a teacher, an avid reader, and an "adventure" cooker.
My favorite things to cook
I love to cook Mexican and southwestern foods. Anything with a kick and cheese. The thing I love about those types of meals is that I can add whatever I want and it still has the basic taste. I don't eat beef or pork so I can add beans and lots of veggies to chicken and then turn it into tacos, chili, or even into a filling for fajitas or enchiladas.
My favorite family cooking traditions
Ummm... we don't really have them. I have only recently been talking with my mom about cooking and giving her my recipes because she didn't really cook anything that wasn't from a box while I was growing up.
My cooking triumphs
I am doing well cooking my favorites here in China. I have succeeded in making tortillas, salsa (fresh!), tacos, chili, cookies... even white bread! There are things I had to have sent to me here so I could accomplish that, but it's been a positive experience.
My cooking tragedies
Ohh... the wasted chocolate! I tried to make cookies here, but the butter I bought must have been margarine and highly oil based. They spread out and burned in 5 minutes... so sad.

Honey Mustard Chicken with Pretzel Crust
This was great! I cooked it a little too long (I had smaller chunks) but that's my fault :)! I thought that the flavor was wonderful and I will make this again!

White Chili I
I loved this recipe. I would have rated more stars, but I made some changes to add some extra flavor to it. Added more cumin, doubled the beans, used minced garlic instead of powder, added red pepper flakes, and a splash of cinnamon (the Ohio in me). It was wonderful! Great with cornbread!

Apple Breakfast Bread
I love this recipe!! I followed the advice of some of the reviewers and used half brown sugar but kept the apples diced. So moist and tasty! I think I'll have to make this often. It's also a good thing I read that the mix would be very thick and hard to stir. I would have given up! Thanks so much for the recipe!
