Nurse Ratchett
About this Cook
I'm currently working as a nurse in interventional radiology in a relatively large teaching hospital. I really enjoy spending my days off shopping for food and cooking it! My mother thinks food shopping is a drag, but I couldn't love it more- thats IF I have something fun and exciting to do with the food.
My favorite things to cook
My true love is probably baking- I love making bread from scratch.
My favorite family cooking traditions
Anything that comes out of my mothers kitchen is flawless- I want to be like her when I grow up! Holidays involve huge spreads of almost anything you can think of.
My cooking triumphs
A recent banana nut cake that I brought to work earned me a marriage proposal- LOL. I'm already engaged, of course, but it was pretty cute.
My cooking tragedies
It amazes me some times that edible things come out of my kitchen because every time I involve myself in a "project", SOMETHING goes wrong! I always have to laugh, because it usually ends up tasting pretty good.

Chicken and Corn Chili
this was great- very easy. i used one can of enchilada sauce (instead of salsa), six chicken breasts, a can of diced tomato w/green chilis, and a cup of chicken broth (could have used just a half- little soupy). i threw everything in in the morning, and pulled the chicken out to shred around hour 5 1/2 and found it to be done, so i left it on warm until the "big game". served with cheese, sour cream, and jalapeno wheels. loved it!

New England Potato Soup
delicious! as always, trying to make things a little healthy, i cut out the butter (used cooking spray) and added about a cup of shredded carrots and a package of frozen broccoli florets that i cooked and then pureed. after the carrots and potato were boiled soft, i blended the whole mixture in the blender- it was so creamy, i only had to add 1 1/2 cups of 1% milk. throw a little low fat shredded cheddar on top-yummy!

Rosemary Mashed Potatoes and Yams with Garlic and Parmesan
this was such a good recipe! i tried to make it a little more healthy- i didnt use any butter (it doesnt need it) and just added a little fat free evaporated milk (just a tablespoon or two) as someone else suggested....i used fresh rosemary which was sooooo good- the only problem was that i over did it a little- oops. still a great recipe though :)
