Enchiladas Suizas

I've been making this one for a loooong time now. There's not much I do to adjust, only difference is that I mix the chicken and cheese together with about 1/2 cup chopped onion in a bowl prior to puttting it in the tortillas. Also, suuuuuuper messy, but awesome! :)

Grilled Peanut Chicken

My family and I loved this dinner! I switched it up a bit after reading other reviews and decided to add low-fat coconut milk in to the sauce and marinated it overnight. I broiled the chicken for about 7-10 minutes on each side. This made the peanut sauce more crunchy and delicious. I made some extra sauce to use on top of basmati rice for a side. I didn't use as much garlic for the additional sauce, but it was equally as delicious. All in all, I'll definitely be making this again.

Abby's Chicken Rollatini

As delicious as the recipe sounds, I was a little dissapointed with this one. For me the flavor just wasn't there. I made it almost exactly as written, the only difference being that I used a little less oil and a little more wine. I had to sprinkle salt on top of the chicken to get a better flavor, but even then it was missing something...I just don't know what.

Albondigas Soup I

Fantastic recipe! I made a handful of changes to make it more authentic for the mexican side of the family. I added cilantro at the beginning, and didn't put as much fresh basil or onions as called for in the meatballs. I also added 3/4 cp. of rice 30 minutes prior to the soup being done instead of 1/2 cp. at the beginning. The biggest changes I made were to use chicken broth instead of beef and adding rice to the meatballs. This is how my boyfriend was used to it, so I thought I'd try it. I put 3/4 cp. rice in the meatballs, which is a lot, but that's how it was preferred in my house. Overall it was great! Highly recommended!

Simply Lasagna

Absolutely delicious! The only thing I changed was adding mild Italian sausage to the ground beef and cooking the two together. Considering that this made twice as much meat, I would double the amount of meat called for automatically in the future. Other then that, it was perfect!

Broccoli Cheddar Casserole

I made this for Christmas dinner and everyone loved it! I halved the recipe because I just didn't feel like chopping 8 cups of broccoli and I had some difficulty finding a pan big enough to fit a 9 x 13 in dish in to while cooking... :o) Based on other recommendations, I kept the amount of salt at the recommended amount for a full sized dish and I added extra cheese. I also topped with a cheddar and monterey jack blend for a little added flavor. It was delicious and pretty easy to make, and I will definitely be making it again!

Fettuccini Carbonara

This carbonara was excellent! I made it pretty much as is, the only difference being that I added more parmesan cheese (I love that stuff!), a little bit extra bacon and 1 more egg yolk. It was delicious. One of my favorite new recipes. I'll be adding this to my regular recipe box.

Bacon-Wrapped Asparagus

Brown Sugar Smokies

I didn't even get these off the griddle before people were taking these. I had to make a lot more than I had expected because they went so fast! I actually just threw the uncooked Lil Smokies in a bowl of brown sugar, mixed them around and then wrapped them in the bacon. Once they were all on the griddle, I put a little bit more brown sugar on and then broiled them on low for about 7-10 minutes. Amazing, simple and SO messy!

Scotch Eggs

These were so delicious, but so massive that we couldn't eat much of them. But, I don't believe that has anything to do with the recipe so much as how much of the sausage mixture we decided to use on each egg. Either way, we'll be making them again, without a doubt.
