Banana Oatmeal Crumb Cake

This crumb cake was absolutely delicious. I used 4 bananas and didn't really measure how many cups that was, but it turned out perfect! I also used grape nuts instead of walnuts on the topping due to nut allergies in our home. That added just the right amount of crunch to keep the texture of the cake true to the recipe. This recipe is going into heavy rotation in my kitchen.

Black Bean and Rice Enchiladas

Delicious! I only made one minor change, because I had a can of enchilada sauce, so I poured it over the top before baking. Turned out perfect! My very picky family went back for seconds, and the leftovers disappeared before lunch rolled around the next day.

Tuna Noodle Supreme

Very good! Made this exactly to the recipe, and turned out delicious. I also uncovered for the last 5 mins of baking to get the top golden brown, will probably add some potato chip crumbles to the top next time.

Cream of Mushroom Soup II

Absolutely delicious! I made a couple of changes, but that was more a matter of personal preference. I used a small yellow onion (it's what I had on hand) instead of the green onion. I also added 2 T of cooking Sherry and replaced the vegetable broth with chicken broth. Before adding the light cream I pureed the broth so that it was smooth, setting aside about 4 mushrooms that were just beautiful, and used them for garnish. Even my teenaged son gobbled up this soup! I will used this recipe often, thanks.

Fluffy Buttercream Frosting

Quick and tasty, but it is quite sweet. I used powdered egg whites instead of fresh because powdered is pasteurized to prevent spoilage. Also, do put in the time with the mixer, it is totally worth it.

Walnut-Tarragon Chicken Tenders

This recipe is wonderful. I used cashews instead of walnuts, and my son who hates nuts ate everything on his plate and went back for seconds! Highly recommend this recipe to everyone!

Chewy Chocolate Chip Granola Bars

Very tasty! I've been trying to find a more cost effective alternative to my family's favorite lunchbox snack; chewy granola bars from the grocery store. These are perfect! I didn't have any cheerios, so I used golden grahams instead. The bars tasted like S'mores! Delicious! I also used honey instead of corn syrup. I reduced the cooking time to 15 minutes, then turned off the oven and let the bars stay in the oven another 5 minutes. They turned out perfect! The kids are flocking to the kitchen to try the first batch!
