Blackberry Cobbler

Reviewed: Jun. 16, 2010
Excellent idea. And the proportiona/measurements were spot on. My only concern is the jelly roll style. Everything kept falling out. Hey, it's cobbler, you can't really mess it up. But the presentation would have been prettier if the filling would stay in. Any suggestions?

Not a very pretty presentation, however the taste was good and can be tweaked if you like it hotter.

Spanish Rice Bake

Good base ingredients...but no big whoop in the flavor/presentation department. I will try to make it again....maybe it's better as a chip dip or something.

Polish Rice Cake

yes yes and more yes. I did add a bit of sugar to the cooking rice. You can add any kind of dried fruit in it. It's great. My husband and I love it. I am making it AGAIN this week.

Just ok. I'd rather have a different dish. It just wasn't very flavorful.

Louisiana Shrimp Casserole

Reviewed: Feb. 8, 2009
I agree that this dish would be bland without some additions. My additions were: creole seasoning to the shrimp and soup mixture. I had to use onion instead of mushrooms, so I also sauteed garlic with it. Good idea! Good recipe! My husband loved it....I don't eat shrimp, so i can't rate it for myself.

Creamy Kielbasa and Potato Soup

Even though I added more vegetables and had to thicken it....5 stars for a great idea that me and the husband loved!! Added carrots, cabbage, and basil and parsley. Used more chicken broth/boullion too.

All-Day Apple Butter

Reviewed: Jan. 28, 2009
yes yes and more yes. This is so cool! Set it and forget it. And very flavorful. I had to use a sieve to crush them up instead of a wire wisk....but other than that I went straight by the recipe and it turned out wonderful. Five stars.

Raw Apple Pound Cake

Reviewed: Jan. 23, 2009
Very moist. I decreased to oil to 1/2c. and added cinnamon applesauce. I think that made the texture better. It also makes it a little more on the healthy side.

Beaufort Stew

Reviewed: Jan. 23, 2009
My husband really liked this recipe. It is kind of like gumbo. I used a few different items because of what was on hand. The and shrimp seasoning mix.....I used Old Bay. Instead of corn on the cob....I used whole kernal corn from a can. I also had to use previously frozen shrimp from the prepackaged stuff at the store. I don't eat seafood, but again, my husband thought it was great.

This recipe was nothing to flip over. However, it does tenderize the deer meat very well.

Stuffed Pepper Soup II

Reviewed: Jan. 23, 2009
Tasted OK. I added quite a few other ingredients to make a better flavor. I added thyme, worcestshire sauce and rosemary. I used beef broth instead of water and increased the amount of salt and pepper. The soup ended up rather thick, but that could easily be remedied.

Basil Buttered Beans

Reviewed: Jan. 23, 2009
Most excellent. I put butter on corn, why not green beans too! It really helped give green beans a little kick. I used frozen green beans instead of fresh because that is what I had on hand. I am sure the fresh would have provided a better texture. The flavor was awesome!
