Cranberry Nut Bread

This is a keeper! The bread is very moist and full of flavor. I made a total of 12 mini-loaves for gifts. I baked 4 mini-loaves at a time for 25 minutes each batch. There are a lot of cranberries in every bite. If you don't want the bread to be too tart, I recommend using 1 to 1-1/4 cups of cranberries.

Parmesan Chicken II

Tastes great and easy to make! I added bread crumbs to the mixture. Also cooked it for the full 45 minutes for 6 large drumsticks. Will definitely make it again.

World's Best Lasagna

The lasagna was good, but not outstanding like I had expected. I don't eat beef, so I used ground turkey instead. I also accidentally used packaged shredded mozzarella cheese instead of sliced from the deli. I'm sure these two things made a difference. I will make it again one day and use the exact ingredients.

Sara's Iced Coffee

So good! I followed another users suggestion to pour the sugar mixture into the coffee and cool it altogether. I only had French Vanilla coffee creamer on hand and that made it taste great! I don't need to go to McDonald's or Starbucks for iced coffee again!

All-Around Good Smoothie

Black Beans, Corn, and Yellow Rice

This is an easy dish to prepare and a great way to change up the usual boring rice. I stuck with the directions on the package of rice and used 2 cups of water instead of 1 1/4. Next time I will prepare the rice as directed on the package and then add the mixture of corn and beans. I will also add some cilantro to give it a bit more flavor. My family enjoyed it.

Penne with Chicken and Asparagus

This dish was simple and easy to make. The only thing missing was that I think it could have used a little more chicken broth. It was slightly dry with not a lot of flavor. Overall a good dish.

Blueberry Oat Bars

Mmmm, so good! I followed the recipe exactly the way it was written. Wouldn't change a thing. When making the bars I used fresh blueberries and cut the butter in thin slices so that it would blend easily. Definitely will make these again!

Baked Coconut Shrimp

Taste great! It is a nice change from the usual weekday meal. It would have been nice to have had a special sauce to go with it. I bit dry without something to dip it in. I will make them again, but I'll be sure to have a sauce for dipping.

Slow Cooker Chicken and Dumplings

It came out good, but not great. It had good flavor, but I used "thin sliced" boneless skinless chicken breasts that made the chicken taste a bit overcooked. It was also a little doughy.

Honey Ribs

These honey ribs were very tender and juicy. Also, very easy to make. I found that they were done in 3.5 hours. My husband had the idea to add bbq sauce on them and then broil for 3 minutes. They tasted great!
