General Tsao's Chicken

Reviewed: Jan. 16, 2003
The chicken came out great. The sauce was extremely thick and took quite a bit of water to make it the correct consistency. Also found the sauce was much better after adding additional brown sugar and a bit of crushed red pepper. Also added streamed broccoli and green peppers.

Cheryl's Spinach Cheesy Pasta Casserole

Reviewed: Jan. 16, 2003
This was great, and fairly easy also. I got my whole family to eat it, even the 5 year old. At first they were nervous because of the spinach but everyone tried it and enjoyed it. Will definitely make again. I liked the idea of a main dish with no meat, however you could easily add some if that is what you prefer.

Awesome Slow Cooker Pot Roast

Reviewed: Jan. 16, 2003
came out great, rave reviews from the family especially on the gravy. Used some suggestions of sprinkling with season salt and pepper first. Also decided that adding plain water would not do. Looking around the kitchen decided to use the morning left over coffee, it worked great.

great flavor! Next time will use more ground beef and less kidney beans or may use black beans as others have suggested.

Sweet Potato, Pear and Pineapple Bread Pudding

Reviewed: Jan. 29, 2006
Maybe I was expecting to much but had it not been for the topping this would have been a full disappointment. I had to make a carmel sauce to put over it so my family would eat it. Also found I had to bake it an additional 25 minutes for it to be done in the center. Will stick to my old bread pudding recipe.

Honey Chicken Stir-Fry

Reviewed: Jan. 4, 2007
This is a good recipe to work with. Like other readers,I added more honey and red pepper flakes. Also took an orange out of the fridge and used fresh orange juice instead of water to mix with corn starch then zested the orange and put the peel into the sauce. This added a great orange flavor. Will definitely make again. Family friendly

Microwave Lemon Curd

Reviewed: Feb. 5, 2008
I too had trouble getting the curd to thicken in the microwave. After about 10 minutes I added about 1 tablespoon of cornstarch to thicken. That worked. I followed the recipe except cut the butter back to 1/3 cup. I don't believe that would keep it from thickening though. Just as easy to cook and stir on the stove top.
