Soft Mahi Mahi Tacos with Ginger-Lime Dressing

I came to the conclusion that my family does not like fish tacos. We like mahi mahi but I don't think that the salsa or the sour cream sauce went with the fish. I made the recipe exactly as followed. We ended up eating the fish plain and used the salsa with corn chips (after adding more jalapeno to add some heat and cut down on the sweetness). All said and done we will probably not be making this again.

Blue Cheese Coleslaw

Fresh Strawberry Upside Down Cake

Made exactly as directed and the cake was excellent. My husband was a little leary of it when he saw me putting the marshmallows in the dish (he doesn't care for them) but when it was finished he loved it as well as everyone else. Thinking of trying with other fruit/jello/cake combos.

Creamy Chocolate Frosting

I don't usually make homemade frosting as I found good old "Betty Crocker" to always work. I decided to make this for my homemade vanilla cupcakes and it is truly delicious. Worth the time and effort.

Slow-Cooker Corned Beef and Cabbage

I attempt to make a corned beef dinner every St. Pat's day and this is by far the best recipe I have ever used. My whole family commented on how good it was. This will be the "keeper" recipe for corned beef and cabbage.

Slow Cooker Tapioca Pudding

very good and quite easy. I took others suggestions and added vanilla and salt. Tasted great but the texture was not quite the same as a cooked pudding, however it was much easier to make.

Cream Cheese Squares

excellent recipe. So easy. Per our family preferences I did cut back the cream cheese to 1 pkg and thus decreased the sugar. Have made this with and without adding fruit filling and is always a winner

Pumpkin Pie Squares

Excellent. The dough takes a little work to get it spread out into the entire pan, but makes a wonderful crust when finished. Have made these several times now and my family loves them.

Soft Giant Pretzels

really enjoyed this recipe. My husband grew up in Philadelphia and he says these remind him of the pretzels they use to get there. Took others advice and brushed with 1/4 cup butter and sprinkled with salt before baking. Browned nicely.

Slow-Cooker Chicken Tortilla Soup

maybe I'm just not a chicken tortilla soup person, but I found this recipe to taste liked spiced water with chicken and corn. There was no depth to it. I made the recipe exactly as written. No one in my family thought it was that great. Probably will not make again. Too bad because I really wanted to enjoy this recipe.

Banana Chocolate Chip Cake

Great cake and very easy. Baked it in a 9 inch pan, didn't add the chocolate chips but did make as a "poke" cake by pouring instant chocolate pudding on the top. Delicious!

Rhubarb Bars

Very good. Even my daughters who don't eat rhubarb enjoyed this bar. Played with the recipe a bit to make it in a 9x13 pan. All in all, a new way to use rhubarb.

Grandma's Chicken Noodle Soup

A true winner. I have been making homemade chicken noodle soup for years and this is definitely the best. I made the recipe as indicated but did use others suggestion of adding precooked chicken from the grocery store with it's juices. A true keeper and so easy.

White Chocolate Macadamia Cranberry Dreams

Everything is great about this cookie except that with the given amount of white chocolate chips it makes the cookie too sweet (at least for me and my family). So I cut the chips back to 1/2 cup and add 1 1/2 cups of the macadamia nuts and dried cranberries, then you have perfection.

Rainbow Cookies

These came out perfect. I did add 1/2 tsp. almond extract also. I had been searching for a good recipe for these cookies and I have finally found it. Not near as difficult as I thought they would be. Will now be on my holiday list forever.
