Trinidad Stewed Chicken

My family and I loved this dish. I used boneless skinless chicken thighes as that is what I had on hand. Per our own preferences I added more garlic to the rub/marinade and let it sit overnight. I added all coconut milk instead of any water (why waste the extra) and added about 1/2-3/4 tsp. of red pepper flakes (again per my families tastes). The chicken was tender and very flavorful. I will defititely be making this again.

This is an easy and delicious recipe. The nutmeg really is wonderful, don't skip it. I use eggbeaters to provide a low fat yet tasty meal.

Bread Pudding II

I love this recipe. It is a great way to use up dry raisin bread. Make sure to press the bread down into the pan and if necessary add more bread cubes. Mine comes out perfet every time

Cinnamon Ice Cream

I had never tried cinnamon ice cream before this recipe and I was pleasantly surprised. This is very creamy and goes well with several desserts. My favorite way to use this ice cream is to make ice cream sandwiches with iced oatmeal cookies and this cinnamon ice cream in the middle.

Easy Sausage Strata

This is a great recipe and I have been making it for years. It's easy to change it up with other add ins besides the sausage. Just to make it a little easier I don't cube the bread. I butter each slice and just lay it in the 9x13-inch pan. Then sprinkle the sausage over the bread, pour on the egg/milk mixture and top with the cheese.

Creme Brulee French Toast

This was delicious! I made this for Christmas morning brunch along with the Breakfast Pizza recipe from this site and everyone loved this. I did follow a few of the suggestions and cut the brown sugar down to 3/4 cup. Also, since I didn't have any orange liquer on hand I used about 1/2 tsp. of orange flavoring. This added just a hind of orange flavor. Overall a very easy recipe that everyone enjoyed.

Cherry Sugar Cookie Macaroons

I absolutely love this recipe. After having made over a dozen time consuming yet lovely and delicious Christmas cookies, I decided to try this very easy recipe.....and it stood up to all the other cookies on my tray. The only change I made was to use chopped almonds instead of the macadamia nuts. The main reason being I had almonds on hand and secondly I think their flavor combines better with cherries and coconut. These are a new Christmas favorite for me.

Blueberry Zucchini Bread

wonderful bread. Moist, and flavorful. I made mine into 4 mini loaves and they came out perfectly. They did require an extra 10 minutes baking time. I did substitute 1 cup of the all purpose flour for whole wheat flour and used 2 cups of white sugar and the extra 1/4 cup I used brown sugar.

Blueberry Cornmeal Muffins

I really enjoyed these. I did add more blueberries than call for and also add 1 teaspoon of maple extract. It goes so well with the cornmeal and brown sugar.

Savory Crescent Chicken

This was one of the first recipes I ever followed close to 30 years ago, I made it for my parents and sisters. It came from a Pillsbury bake-off cookbook. I use dried, seasoned bread crumbs in place of the croutons just because it is easier. I just made these last week and they are as good as ever. Thanks for bringing back an old favorite. I have made these with canned, drained albacore tuna and adding dried dill weed also.

Grandma Ople's Apple Pie

I have baked apple pie for years and this was the best I ever made. It was also my first attempt at a lattice top and it was much easier than I thought. This will now be my go to apple pie recipe. I did add some cinnamon to the apples before putting the crust on top.
