The Best Leftover-Eater EVER!
About this Cook
I am a 24 year old who just bought my first home a year ago with my wonderful fiance. We are planning our wedding for September of 2010. We enjoy taking weekend trips, BBQing, playing with our awesome dog Lita, watching movies and playing cards.
My favorite things to cook
I LOVE using my crockpot (thanks, Mom--great birthday present!), stir-frying, making soups and stews and trying new things.
My cooking triumphs
I'll describe my cooking triumphs AFTER making my very first Christmas dinner on Friday (butterflied, broiled lobster tails, bacon risotto, baked creamy onions with rosemary and stuffed mushrooms for an appetizer). Wish me luck!
My cooking tragedies
So far, just the tuna casserole I made. It looked good, but just...wasn't. My fiance asked me (repeatedly) to never make it again.

Slow Cooker Manly Stew
This is the only beef stew I'll make. Throw in some beef cubes (sometimes I'll brown them first if I'm feeling really ambitious), mix in the 2 soups and dried onion soup mix, set on Low in crock-pot for 8 hours and we're good to go. I usually throw in some pre-cooked potatoes and carrots around the 6hr mark. Whip up some biscuits and dinner is done! My only suggestion is not to add any salt because the onion soup mix is salty enough.

Sausage Stuffed Mushrooms II
I made these stuffed mushrooms as an appetizer for our Christmas dinner. They were AWESOME and so easy. I used baby 'bella shrooms and Bob Evans sausage mixed with cream cheese, then topped with green onions after they were baked. YUM! I think the baby bellas make all the difference--so much better than regular old button shrooms.

Onions Baked with Rosemary and Cream
Yum! I made this as a side dish for our Christmas dinner of lobster tails and bacon risotto (the very FIRST I made on my own!). Certainly an artery clogging meal, but SOOOO good. These onions were delicious, my fiance and I both really enjoyed them. I did not leave the skins on but the onions kept their shape nicely. Great side dish for a holiday dinner because (after the prep) you can pretty much forget about it for an hour!
