Buttercream Icing

Reviewed: Jun. 12, 2015
This recipe -- exactly as written -- was a complete hit! Used small doses of this sweet icing on birthday cupcakes and opted to freeze the rest for the next birthday in a few weeks. Thanks for sharing this. (I would have included photos but the cupcakes didn't last long enough!)

Pizza Dough I

Reviewed: Feb. 3, 2015
Would make this again. Added basil to the dough and a bit of cornmeal to the bottom of my pizza stone before placing the dough.

Easy Meatloaf

Bland, doughy texture that suffers from a lack of seasoning.

Mayonnaise Cake II

Reviewed: Jan. 13, 2015
This recipe is my favorite mayo-chocolate recipe so far. Found a wonderful brown sugar icing to go with this one: 1/2 cup packed brown sugar, 1/4 cup margarine, less than 2 tablespoons of whipping cream, and slightly less than 1-3/4 cups confectioners' sugar. Decadent!

Chocolate Mayonnaise Cake II

Reviewed: Jan. 13, 2015
Skipped the vanilla and 1 tsp baking powder and increased the baking soda to 1.5 teaspoons and added 1/2 teaspoons salt (to match a similar recipe). Also adapted a wonderful brown sugar icing to go with it: 1/2 cup packed brown sugar, 1/4 cup margarine, less than 2 tablespoons of whipping cream, and slightly less than 1-3/4 cups confectioners' sugar. Decadent!

Hard Do Bread

Reviewed: Jan. 11, 2015
Lovely but it has a much lighter density than the store-bought versions I've been used to. It's a nice addition to my recipe box but I'll keep looking for something that's a bit more dense.

Irish Tea Cake

Reviewed: Mar. 17, 2013
This cake is understated in its simplicity. But, sometimes, a nice simple cake is all that you need. This recipe is not too sweet and had a nice delicate crumb (I ran out of all-purpose flour and used cake and pastry flour for half of my flour content). Once this was served, I found it difficult to stop eating -- especially when I added whipped cream and strawberries to it. I'm not sure how "Irish" this recipe is, but it's certainly one that I'm keeping! A great addition to our St. Patrick's Day menu at my house!

Campbell's Kitchen Broccoli and Cheese Casserole

Reviewed: Feb. 22, 2013
Used fresh broccoli instead of frozen and added some cooked chicken breast and diced mushroom but otherwise loved the recipe. A flavourful side dish.

Golden Sweet Cornbread

Reviewed: Feb. 22, 2013
First sweet cornbread recipe I've ever made and it came out exactly the way I like it when I buy it elsewhere -- crunchy on the outside, great texture @ about 22 minutes of baking time in my oven in a parchment lined, ungreased cake pan. Next time, I'll make them in muffins for a more convenient snack size but will make no changes to any of the ingredients listed. Thanks for sharing this -- it's a real keeper! :-)

The Best Lemon Bars

Reviewed: Jan. 24, 2013
I'm giving this variation 4 stars because I liked the flavour. Excellent crust! Unfortunately, I found the top a bit runny. Hoping that a night in the fridge will help everything firm up a bit better.
