Cheesy Amish Breakfast Casserole
I've made this several times and it is always a hit. I use turkey sausage and have even made a smaller batch without hash browns. Delicious every time! I prefer to brown the hash browns first and get them crispy. Instead of mixing them in, I press them in the bottom of the pan and pour the egg/cheese/sausage mixture over the top. Yummy!

Slow Cooker Pulled Pork
I made this on Sunday for my husband's birthday and it got rave reviews from the crowd of 15! I seasoned and trimmed the fat from two 4 lb pork rump roasts and put them in the crock pot with 4 cans or root beer and cooked on high for 4 hours. When I got home over 5 hours later, I had a hard time getting the 4 pounder out of the crock pot because it was falling apart. After shredding the meat I added 1/2 bottle of Sweet Baby Ray's Chipotle BBQ sauce and 1/2 bottle of their Hickory Brown sugar and returned the meat to the crock pot and put on warm. Delicious!

Honey-Ginger Shrimp and Vegetables
This was very good! My husband loved it. I used two zucchini and only 1 tsp. of red pepper flakes. I liked that it was a pretty quick and easy meal! i will definitely make this again.
