T's Sweet Potato Fries

These were great. I only cooked in microwave for 3 min. Tossed with garlic olive oil, lemon seasoning and italian spices. Baked for 45 min. Crispiness depends on how thick you cut. The smaller cut, the crispier. I cut mine like steak fries and they turned out nice an tasty! My 2 year old loves these!!

Stuffed Mushrooms I

This is an excellent recipe. I added a little lemon juice, all the stems and 1/2 cup of parmeson cheese. With all the stems being used, you'll have some left over. It made a wonderful spread on slices of french bread. Just bake at 350 until crispy. I also pre-cooked my mushroom caps so they would become waterlogged once stuffed. Place on cookie sheet with bap side up and brush with olive oil. Roast at 400 degrees for 6-7 min, or until they are golden and liquid begins to seep out. Place cap side up on papertowels and seal in airtight container until ready to use. Pre-cooking does a wonderful job at keeping the mushrooms from becomming watery, gooey messes.

Chicken Tortilla Soup

This is a really good recipe with a few changes: increase garlic to 1-2 cloves, 3 cans chicken broth, 1/2 fresh diced tomato instead of canned, 1 can corn, add dash of paprika and extra dash of chili powder. I also used a rotisserie chicken and shredded the chicken with my hands. Cook onion and garlic with a little olive oil until onion is soft. Boil broth with tomato, chicken, chili powder, cumin, paprika and corn. Add onion/garlic mixture, reduce heat and simmer until you're ready to eat. I left out the cornstarch as I like the broth and the tortilla chips soak some up. I also didn't have any cilantro, I will try that next time. I may also try a cup or so of black beans or brown rice.

My Best Beef Brisket

I substituted worsheschire sauce for the soy sauce and a roast instead of brisket. After marinating for 24 hours I cooked it on high in crock pot for 3 hours. Tasted WONDERFUL! Made some great leftover dishes too.

Bacon Cheese Treats

This has a great base, but is a little bland. I used real bacon and crumbled it up. I also increased the onion to 3/4 cup, added 1/2 clove garlic and sprinkled freshly chopped chives over the top. My 2 year old loved them!

Simple White Cake

agree with other reviewers. I used my kitchen aide to mix and let it mix for a while. Also added more milk and vanilla. Can't wait to experiment more with this one!

Cream Cheese Frosting II

This is a delicious and easy frosting!! Wonderfully rich cream cheese flavor. I added a little extra sugar and some cocoa powder for chocolate frosting. I found that by rinsing my mixing bowl in hot water before starting helped "melt" the cream cheese and I had no lumps. Will be making this again!

Broccoli Chicken Casserole I

I followed others' advise and made the following changes. Boiled chicken in water with a few broth cubes. Add 1 can each of crm chicken and crm mushroom. Add 1 sm garlic clove and 1 tbs onion powder then mix all together. Top with some more stuffing mix. This is what makes the recipe so great, MIX it all together. Wonderful!!!! My two year old loved it!

Cream Cheese Squares

Great and easy to make. The cinamon/sugar on top tastes like cinamon toast. I let them cool in the fridge over night and they were easy to cut and place onto place. Very yummy!!

Cake Mixes from Scratch and Variations

Great recipe. I substituted extra virgin, extra light olive oil and increase the milk by 1/4 cup. This base works great with splenda substitute. I made the white cake and used it for strawberry short cake. Everyone loved it!
