Chocolate Candy Bar Cake

Great recipe. I had a Dark Chocolate cake mix on hand, and went with that instead of the Devil's Food. I used Butterfinger candy bars and omitted the nuts since a few of my family members aren't big on nuts. It went over very well, but several people commented on how rich the frosting was. I made exactly what the recipe called for, with the exception of the cake mix switch I mentioned earlier. Next time I would use less sugar in the frosting and probably go with a different type of candy bar. The crunch from the Butterfinger bars seemed to put some people off.

Cranberry Salad IV

I tweaked this a lot, but I adored what I came up with in the end. I used 2 cups of ground fresh cranberries, a large can of crushed pineapple, and a large strained jar of mini mandarin oranges. I let it soak in 1 1/2 cups sugar for several hours, straining the juice as necessary. I also used whole mini marshmallows, and flavored my whipping cream with a toss of powdered sugar and some vanilla extract. The result was the perfect combination of tart and sweet. I loved it, and it went over well at Christmas. Will definitely make this again, five stars!

Mini Sweet Potato Casserole

It was quite good. The coconut lends a unique, sweet flavor to the dish. I'm not usually huge into sweet potatoes, but I made it as one of the side dishes for Christmas dinner and everyone seemed to like it well enough. The raisins were a yummy touch. The only complaint was that it was too sweet for a few people. Overall, I'd give it four stars.

Sweet Potato Minestrone

This was very, very good! With a few small tweaks, I'd easily give it five stars. I added a can of strained corn to mine, as well as a can of white kidney beans. I also added more seasoning than the recipe called for, but that's just a personal preference. It was one of the side dishes at Christmas dinner, and was absolutely to die for with a bit of cut up ham tossed into the bowl. I will definitely make this again, everyone loved it.

Soft Gingersnaps

As far as gingersnaps go, I could not have asked for a better cookie. My boyfriend and I prefer more spice than most, so I doubled all the spices. I also baked them in a well-greased muffin pan (I like a thicker cookie, and having them all the same size is nice, too!). They were absolutely delicious, and stayed chewy for days. Will continue to use this recipe for years to come.

Soft Sugar Cookies IV

I have to say, I'm being generous with a three star rating. I followed the recipe exactly as it is written, and was not impressed. Both myself and my boyfriend found the result to be a crumbly, almost too-floury cookie, that tasted like butter. And not in the good way, in the overwhelmingly greasy way. It was strange. Though the texture screamed "Too much flour!" the taste begged to differ, yelling "Too much butter." To put it simply, I don't think I'll try this recipe again. It seems like more work than it's worth, honestly. Sorry.

Good Old Fashioned Pancakes

Like some of the other users, I added a bit of vanilla and a dash of cinnamon to these for a bit of a sweeter flavor. I also cut the baking powder down to 3 teaspoons. They turned out really good. My boyfriend, who is not a huge fan of breakfast foods, really like them with raspberry fruit topping on them; I found them delicious with maple syrup. He says that they are a 3/5; I give them a 4/5.

Big-Batch Butterscotch Cookies

Very good recipe. I halved it as well, since I was only making them for a few people. I added in a half bag of Butterscotch chips, as well as some crushed Wether's Original candies I had on hand. The cookies were not quite as chewy as I usually like, but that very well might be my oven, which is "touchy" to put it nicely. At any rate, the cookies were quite good. I'd give them a 4/5.
