I cannot believe it has been nearly a year since I last updated this blog. It doesn't feel that long, at all. I guess that's a testament to how much of a whirlwind last year was!
I have had many adventures, both in and out of the kitchen. I have traveled, made new friends, said goodbye to a few, eaten lots of good food, and just in general enjoyed life.
I'm still in Japan and will be here for ANOTHER year. So that is 3 years total! I will be heading back home to America after this last year though, so I will have to make the most out of the next 12 months!
I have also FINALLY had some success in dieting, although I have hit a bit of a stalemate. I did lose about 6-7kgs which is about the amount that I gained when I first arrived in Japan. It feels good to get that extra weight off my back (and front) but the
battle isn't even half over yet.
Cooking easy, bulk meals, has been really beneficial for me fighting the battle of the bulge. My weeknights can be pretty busy, so I have started using my Monday nights to make large pots of healthy stews and curries which I then eat for dinner then entire
week. I call all my curries "The Brittany Special" because I don't follow a recipe. I just throw in some canned tomatoes, whatever meat and vegetables I feel like (sweet potatoes are good!) and then a random mixture of ginger, garlic, garam marsala, turmeric,
cardamon, cumin, and various other spices. A dollop or two of full fat yogurt gives it a nice taste creamy texture. It's delicious and healthy! I have however, gotten a bit sick of curry so I have been incorporating some less healthy food back into my diet
which has stalled my weight loss. :-\ It's summertime and ice cream has been calling my name!
However, with my birthday a mere month away I want to get back into the swing of things! Tonight I think I will be having a healthy chicken breast sandwich with a side of sweet potato fries. It will be my first attempt at making sweet potato fries, so we will
see how it goes!
