Really a great chowder... I would give it 5 but we feel it needs just a little something more so I'm going to give it 4 stars... but still a great chowder! I followed the suggestion of using the bacon grease to sautee the onions, celery, carrots & potatoes. I also used whole milk vs. half and half but I do that with every chowder recipe. We had a blizzard the day I made this and didn't realize I was out of red wine vinegar and no stores were open, so we took a little out and stirred in balsamic... we did the same for rice vinegar and sherry... finally we found that Worchestershire sauce was really good... I added maybe a half tablespoon as it is a very strong flavor.
Definately a keeper! I'm just going to see if I can figure out what is missing... it's very slight but we feel it just needs a little something... just not sure what it is yet! This is certainly worth a try! :-)
