Best Spinach Dip Ever

This was hit at my daughter's birthday party for the adults! I used Knorr Vegetable Soup mix because I couldn't find leek soup mix and it turned out perfectly! You can't use onion soup mix with this recipe, the flavor is just too overpowering as I learned the first time I made this. It's worth getting all the ingredients ahead of time.

Sugar Cookie Icing

First of all, the directions are completely off! Putting 2 tsp of milk into 1 cup of powdered/confectioners sugar and expecting it to become smooth is a joke!!! I ended up adding 2 TBSP of milk to get a very THICK, but smooth consistency and then added 1/2 TSP of vanilla (as I have a child allergic to nuts). I then added the corn syrup 1 TSP at a time for a total of 8 TSP! The icing did not taste that bad, but not that great either. Because of the excess corn syrup it does leave an after taste. It took the coloring very well, I just used generic food coloring, but it did not harden that well at all, I had to let it sit overnight before the frosting became hard. Overall, I had enough icing to put one thin layer of frosting on 32 cookies, cut into x-mas shapes. I do not recommend this recipe and I will not be using it again.

Buttery Alfredo Sauce

I really wanted to love this recipe, but it just didn't work out as I hoped. I followed the recipe, and it was indeed rich and buttery, but the Parmesan cheese never melted. It tasted great (which is why I'm giving it 3 stars), but the cheese left a gritty texture. My husband works late so I put some aside some for him and he was not impressed at all. He said it reheated poorly and the sauce separated making it unpalatable. It's a good basic recipe, but next time I'll leave out the Parmesan and use it to garnish, or use a different cheese, and less butter to prevent the sauce from breaking down during reheating.

Awesome Sausage, Apple and Cranberry Stuffing

I was hesitant about adding fruit to stuffing, but it turned out fabulous! I subbed pork sausage and chicken broth because I couldn't find either. The stuffing in the turkey came out moist and delicous. The out-of-turkey stuffing was a little dry and slightly overdone on top, so next time I'll add extra broth and stir half way through the cooking time. This is definately going to be a staple for our holiday meals!

Raspberry and Almond Shortbread Thumbprints

My son has a food allergy so I had to use vanilla. My cookies came out perfect! I rolled them into balls (about 1 - 1 1/2 inches) and make the indent using the back of a melon scoop sprayed with some Pam. I also added some variety using blueberry and strawberry preserves in addition to raspberry. Everyone raved about these cookies! This is the second year I've used this recipe, it is now a staple in my Christmas cookies.

Cocktail Meatballs

Great tasting appetizer that everyone loved! I'm glad I doubled the recipe, they were getting eaten faster than I could put them out :) I did use frozen meatballs because I didn't have time to make them fresh and there wasn't a noticeable taste difference at all.

Turkey Brine

I used this brine with a 16.5 lb turkey for Thanksgiving this year. While the turkey was flavorful and delicious I took away a star because prepping and cooking it was trickier than I expected and the meat had a softer (mushy?) texture I found unappealing. The turkey did cook faster than expected, the wings in particular browned in less than an hour so you may want to put foil over the wings and legs while the breast cooks. While it tasted great, I don't think I'll be doing this recipe again. It was very time consuming and difficult to execute. I used an XXL Ziploc storage bag (which is food safe) to brine the turkey and placed it in a cooler with ice because the whole thing was not going to fit in my fridge. I'm going back to stuffing my bird with citrus and fresh herbs, much easier and less time consuming with delicious results.

Cranberry Sauce I

I wanted to try a fresh cranberry sauce this year and I was not dissapointed! I made the suggested changes: 1/2 C sugar, 1/2 C brown sugar, 1/2 C OJ, 1/2 C water, and 1/2 tsp cinnamon. It was so simple and easy, and my kids who normally won't touch cranberry sauce couldn't stop eating it!

Strawberry Cake from Scratch

Maybe I did something wrong, but my cake did not turn out airy and light. It was extremely dense and heavy. It definitely tasted like strawberry, too much actually. The basis of this recipe isn't bad, but I think it needs a lot of tweaking to make it work. In the end I was really not happy with the existing recipe.
