Pineapple Ricotta Muffins

I made these with a coconut cake mix and fresh pineapple (guessed on the amount). I thought they were delicious, like little Pina Colada cakes. Yes, cakes, not muffins. That is why I gave this recipe 4 stars and not 5. They do not have the consistency of muffins, at all. I would definitely make them again, however, possibly trying the white cake mix and mixing coconut in the batter.

Baked Ziti I

This was a BIG HIT with my grown boys. I used a small container of both sour cream and ricotta cheese and added chopped spinach, shredded carrots and diced green pepper. Also, I left out the meat because I have a son who is a vegetarian. Everyone LOVED this dish.

Egg and Spinach Casserole

My vegetarians and non-vegetarians all loved this casserole. I added French's fried onions on the top for the last 5 minutes of baking. I've also made it without the onions added, and it was great both ways. Left overs are delicious, also!!

Overnight Coffee Cake

We had this on Christmas morning, with left overs warmed in the microwave the next day. It was absolutely delicious. I followed the recipe exactly.

Easy Herb Roasted Turkey

This was the best turkey I have ever had. Luckily, I had a person to help me spoon the mixture between the skin and the meat. He held the turkey on it's end and I did the spooning. Separating the skin from the meat was an easy job (started it with the fingers, and finished it by carefully shoving a spatula as far back as possible.

Oatmeal Raisin Cookies IV

These cookies are out of this world. The only thing slightly different than the published recipe that I did was to use 4 large eggs instead of 3. When it came to the part to add in the raisins, oats, and nuts, I used my hands like one of the other reviewer's suggested. Also, towards the end of mixing in the flour mixture, I poured the egg out of the raisin bowl to help let the batter stick together better.

Mom's Rum Cake

I made this in a 13 x 9 pan, dusted it with powdered sugar and took it to my church council meeting. It got rave reviews. The little bit that was left over went to work the next day, and was gone in a heartbeat. Delicious (and easy to make)

Peppermint Patties

These taste great, but I found it time consuming and frustrating to dip them in the chocolate. The chocolate was so thick that I had to add quite a bit more shortening. I first tried adding cream like one of the other reviewers said, but that made it worse. I don't think that if I had tried to dip them withough freezing them it would have worked at all. The flavor, however, was great!

Irish Potato Candy

These taste exactly like I remember the ones from Utche's Candy in Medford Lakes New Jersey tasted growing up. My mother would always buy us a small boy on St. Patrick's Day. They are very, very sweet, but so are all of the Irish Lasses!!

Buffet Meatballs

I loved this recipe, but had to make additional sauce so all of the meatballs in the crock pot would be covered in liquid while cooking. A lot depends on the meatballs. The 1st time I used pre-made frozen ones and the 2nd time I used my own meatballs. What a difference hand made meatballs made!

Sausage Balls

Cooked for 18 minutes. Suggest a cookie sheet with a lip all around to avoid grease dripping on the bottom on the oven. Also, cooking on parchment paper is suggested
