About this Cook
I am 44 and recently separated I have two beautiful, little girls who are my life. I live in a small Wisconsin town where life is peaceful and I can find any cheese I like!
My favorite things to cook
I love soups and hot, specialty sandwiches. I love baking breads, cookies and making homemade pizza and pasta. I do love recipes where you can throw everything into one pot or casserole dish and get a sumptuous meal. Fancy finger foods are not me.
My favorite family cooking traditions
My family is part Hispanic and part Middle Eastern so those influences run in my cooking. Italian, Asian and Mexican are favorites but I do throw in some Greek (my kids love my Spanakopita.)
My cooking triumphs
I've recently started canning and preserving on my own which my wonderful Mother-in-law has taught me. Cooking triumphs? Cooking more and more like my Mom who I miss very much (she passed away in 2005.) Now if I could learn to make my mother-in-law's German Potato Salad.... Yum!
My cooking tragedies
Um...there have been a few but usually nothing that can't be fixed. I think I botched up my first few tries at homemade flour tortillas. They looked like shoe soles but didn't taste bad. I'm also awful with pie crusts! Thank goodness for Pillsbury!

Bacon Spaghetti
It's a decent base recipe but by itself it is, in fact, very dry. The olive oil soaks in quickly. I ended up making a sauce with some butter, a little whole milk, and added about 1/2 cup shredded, sauted raddichio, and 1/2 cup thawed frozen peas. The bacon definately needs to be the last thing you add in, if you want it crunchy.

Slow Cooker Swiss Steak
This wasn't a bad recipe....it just ended up tasting like beef stew (without the seasoning) to me. The second time I tried it I used my home canned tomatoes with celery, garlic and onion. A bit better and definately is good served over white rice. A recipe I'll have to play with some more....

Jalapeno Popper Spread
As written,the dip is good but very, very rich. I toned down the Mayo and I liked it much better. IF you're not a big mayo fan, you'll want to add 1/2 cup and then taste the mixture. Add more if you like. I love the combination of the cream cheese and jalapenoes! It's even better the next day. I had some left over and I used it as a topping for hamburgers. Really good.
